Evening all-this thread is fast moving today!
Daska- i am intirgued re noodles and courgette-tell me more please.
Someone mentioned Cauli being grated and steamed-is this the 'normal' way or can you boil and mash(lol never cooked it before)
Edwardia- you are so right re food battles as a child(I was force fed veg hence why I haven't really eaten any as an adult)
I went shopping today and bought some cauli(for tomorrow) some bean shoots and egg noodles(stir fry (egg noodles not for me) and for some reason thought I know, I can't have egg noodles but I can have rice noodles and promptly bought some (sigh) i guess the dog will enjoy them!! How stupid of me. Also bought some avocado(reduced) only I have never eaten it before and didn't know what to do with it lol. Tried a bit and wasn't impressed so ended up looking for a recipe on line to use it in, found one only it involved butter, cocoa powder and way too much sugar so now I have lots of chocolate balls in the fridge that I can't eat! Hopefully next shop will go better, let's face it, it can't get any worse.0 -
Wow haven't we been busy today?
I have been thinking about children and eating lately too. Mine are very young, and don't have weight issues, so I just try to give them as much variety as possible. I did baby led weaning with mine which was an eye opener. They definitely know what they want. I too only insist they try things, if they don't like, that's just fine. My eldest loves pasta so they had tortellini tonight, with a meaty sauce. He wasn't impressed tonight he likes "finger pasta" until I told him it was belly buttons lol and he ate the lot! DD had two bits and gave me her bowl back and said "no Ta" bless, she is only 20mths.
I sighed and said, to myself "what are we going to feed you?" and she answered for me and said "ham!" so she had three slices of ham, some cucumber and hovis crackers. Not a crumb left.
Anyway, today's menu:
Oatbran loaf
Scrambled eggs and Harrogate sausages
Moussaka and frozen yoghurt
Bit of chicken leftovers and rest of yoghurt, couple of my bounty bites!
I made my mum some too, soaking the coconut first, much better! I'll give her them tomorrow as she is taking the tots for a couple of hours for me!Bossymoo

I have one of these super whizzy things Lurch Lafer Spirali Spiralizer and DS2 loves making noodles with it. I nuke them gently so they're not cold and use them like spaghetti. Courgette is brilliant but carrot gets a bit sweet.
You can do cauliflower rice in the food processor as well, but the large side on your grater does it fine. Then steam gently
Avocado - I luuuuurrrve them, but they do lend themselves to being jazzed up with other flavours. Hopefully the one you tried was ripe, it should have been very soft and creamy to eat. You can fill the hole with salad dressing and eat it straight or make guacamole or go sweet with it, or bake it in a tomato sauce? Sheila54 suggests filling it with cream cheese and other goodies and grilling it.Eat food. Not too much. Mostly plants - Michael Pollan

The feet thing reminded me of a visit to a horribly bossy consultant two weeks after diagnosis for something non-diabetes related which took four people before diagnosis as worst case of athlete's foot that the chiropodist had ever seen.
Him: Those shoes are entirely inappropriate for a diabetic
Me: What's inappropriate about them, they're Salvatore Ferragamo
Him: They're slingbacks, you shouldn't have the skin on your feet exposed

I still have the Salvatore Ferragamos but I was so freaked I did next day delivery on Crocs and that's all I wear now .. LOVE my Crocs !!:D
Cheapest places for avocados I've found are (a) Lidl (b) ASDA and they need to be squidgy. I've found they go from rock hard to past squidgy in the blink of an eye, right after you've given up prodding the things daily !
The spiraliser looks fun actually daska, I think I may have something that does similar in my unwanted kitchen gadget presents cupboard..
belly buttons lol bossymoo very quick thinking as tortellini and tortelloni were supposedly modelled on the belly buttons of angels, allegedly..
devildog if you can find shiritaki noodles I think they are 0g carbs - tod123 will know or alternatively stir-fried beansprouts as a substitute0 -
I either buy avocados in Lidl / Aldi that are usually 59p or I get the baby ones, 4 for £1.79 from Waitrose. They are not usually ripe but I keep an eye. If they get over ripe then they go stringy. Prefer the Hass ( black bumpy skin) to the florida ones (green smooth skin)
I like them with soft cheese and herbs e. g St Agur Delice, prawns with mayo or make into guacamole type dip. Very good for you, filling and high in fibre.
If they get over ripe then my daughter makes them into face masks

I haven't the foggiest idea whether the avocado was ripe or not lol. It was soft and creamy but not n ice or horrible just weird.
Shiritaki noodles sound good, just had a look and Amazon sell them.
We have got an oriental (mainly chinese/japanese) supermarket not too far away think I will pay it a visit{really good prices from what I can recall from my last visit-over a year ago) I have done one with just the bean sprouts but noodles would be nice too.
I cannot believe how much I have got to learn about this low carb lark, there is so much more to it. I am actually feeling quite excited at the possibilities. You are all such an inspiration, you'll make a cook out of me yetPlease keep the ideas coming.
