This comes from a wartime recipe I saw in a museum over the weekend - I know Oldstylers would love to see all the rationing information and recipes!
It was the East Sussex Aviation Museum, near St Osyth (free to get in as well!) and the interesting thing was that the "tour guides" were all old war veterans who could tell you the history behind all the exhibits. Some of them were ex-Hurricane and Typhoon pilots who talked about what it was really like to be in a dogfight with the Germans!
Anyway, recipe follows...
Vinegar Cake
¼ lb self raising flour
¼ lb sugar
¼ lb raisins
4 oz dripping (I'm sure you could use marg)
2 tbs vinegar (no colour specified)
pinch of salt
¼ tsp mixed spice
1/2 pt milk to mix
Rub the dripping into flour, then mx in the sugar and fruit. Then add the vinegar to the milk in a jug, and pour onto the dry ingredients. Mix well and pour into a 9cm cake tin. Bake at 18o degrees C for 30 mins, then turn down the heat to about 150 degrees for about an hour, covering the top with paper or foil if it starts to brown too much.
Very economical as no butter or eggs required. I'll be trying this one this weekend...0 -
