Ideas please for using up peppers and tomatoes?

Hiya
Don't want to use in an omelette (my only idea so far!) but has anyone got any ideas for something 'warming'? I have heaps of red and green peppers and plain old tomatoes! Have garlic, onions etc and storecupboard stuff if that helps.
BTW, I don't eat meat/fish.

Brush the peppers with olive oil and roast for an hour or so. Peel the flesh from the skin and put it on some buttered toast, seasoned with salt and pepper.

Roast peppers on a bed of tomato sauce - cook the tomatoes with onion and herbs to taste, and put in an oven proof dish. Blanche the halved peppers in hot water, then lay on the tomatoes, and fill with a mix of cooked rice herbs and veggies, or couscous (or whetever else you have) and sprinkle with grated cheese. Bake in a medium hot oven for 30 mins.0

Add some chillis and make a salsa!!
Edit. Replied too quickly. Cut and seed peppers, quarter the tomatoes, chop and seed chillis (add a little onion if you like it). Then for my favorite salsa pop these in a food processor/blender and add one tin 'tall' tin tomatoes and about one dessert spoon white wine vinegar.
We actually prefer this with the 'raw' veg lightly cooked in olive olive then add the tomatoes and blend afterwards. We serve it hot or cold.0 -
