Ideas please for using up peppers and tomatoes?

    As somebody else said, ratatoille (however you spell it). put a load of grated cheese on top, on slices on french bread, then under the grill... or just serve with rice or bulghar wheat. Even better a day later.

    These are delicious and will use up the red peppers and tomatoes (you can leave out the anchovies, cubed feta added 10 minutes before they come out the oven is a nice alternative)
