Ideas please for using up peppers and tomatoes?

  • If you have any mozarella cheese
    Thinly slice a carrot, roughly chop a tomato, roughly tear up some cheese.
    Chop bell pepper in half and stuff with mixture.

    I've only tried it that way, but my friend assures me that if you use cheddar & grill it until the cheese melts that is lovely too.
    Still wish I could buy a TARDIS instead of a house!

    You blanch your tomatoes and remove their skins.

    Then boil them to death. Once cool, strain through a sieve to remove the seeds.

    Voila.
    Good, clean fun.... :D

    And its also really lovely with a red chilli added to it for a little kick :D
    Sometimes it's important to work for that pot of gold...But other times it's essential to take time off and to make sure that your most important decision in the day simply consists of choosing which color to slide down on the rainbow...
  • Get stuffing!!!

    I regularly stuff peppers with all sorts, tomatoes, mushrooms cheese topping. I also stuff them with a vegetarian nut roast mix. Perhaps adding some chilli flakes for an extra kick!

    You could also use rice to stuff either the peppers or the tomatoes.

    Mashed potato with chives and a cheese topping is also good in peppers.

    Or how about making chutney with the tomatoes.

    You could slice the peppers and freeze them to use in a variety of curries, or chillies (vegetarian, of course)
  • Or there's a Tunisian dish called something like Chachouka

    Fry onions, garlic,peppers till soft. Add the tomatoes and simmer till thick with a dash of harissa or Tabasco or chiili powder. Spoon into an oven proof dish and make some shallow dents in the top. Break an egg into each dent and bake until the eggs are set to your liking.

  • you'd need some extra veg, but i love ratatoullie (i usually eat it 2/3 days a week on average!)

  • bruschetta - fry off onion and pepper, add tomatoes and cook until lost most of liquid. Add garlic/dried herbs/chilli if you have them/like them. Slice some crusty bread/french stick, toast and top with the topping!

    Quesadillas

    I just chuck in whatever veggies I happen to have, add a lot of grated cheese, bung em in the oven and hey presto, snack :D

    Particularly good as a nibble after a few drinks ;)

    you can also freeze them... I freeze pepper slices on a sheet of greaseproof and then tip them into a box, when I need to add some I just grab out a handful. Ditto for the tomatoes - slice 'em and freeze 'em.

    Roasted in the oven - tomatoes can be whole or take the core out and fill with herbs and a bit of oil, peppers sliced and herbs/oil trickled over the top. Then eat as is for a side dish or put into a soup base, the roasting gives a lovely mellow flavour.
