    Ladies, ladies ... You have no sense of style nor of your own worth. You don't say such things as a "dollop of this and that" or "don't do measurements". You say that you are a highly skilled guesstimate cook but in tones of such superiority and certainty that no one would dare to challenge you!

    PS I'm one of them 'bitsa' cooks, too! (Bits of this, bits of that)

    I usually make the sauce much thicker for a cauliflower cheese, than if I am just pouring it over veg as it seems the moisture from the cauliflower, etc waters the sauce down.

    Maybe sauce needs to be thicker to begin with?

    I agree with sticher, the sauce needs to be really thick, always use equal amounts of flour to fat (1tablespoon of each = 1/2pt milk) and steam cauliflower as then is not soggy.

    Well now..... I don't measure for this sauce either. It seemed really thick in the pan, and only went thin once I'd poured it over the veg. Neither broccoli or cauliflower was overcooked - the cauliflower in particular I like almost crunchy (although it wasn't steamed as I don't have a steamer).

    It could be that the veg wasn't drained as well as it could have been. I was in a bit of a hurry - Normally these things take me ages, but I managed to cook, eat and clear up in about 1½ hours, which is exceptionally quick for me. :D
    If you lend someone a tenner and never see them again, it was probably worth it.

    I would say that is almost certainly the problem. I have used red leceister cheese before and had no problems that I recall.

    By the way the photo of your cauliflower cheese with bacon looks delicious and I will be trying that soon.
  • Mmmm that does look good, guess what we're having tomorrow night (made with huge cauli for 50p from Asda) Red Leicester cheese here too.

    It didn't make me as drooly as it might as we had a Chinese tonight (before you make disapproving noises it's only the second takeaway I've had since the middle of October!!!)
    and we share a bags of chips, not one each :rolleyes:

    You can just use a colander over a saucepan with a saucepan lid on top of he colander, steamed veg is tastier and probably healthier than boiled. I like my cauli crunchy too. :)

    Speaking of cauliflowers..........make the most of them while you can.....

    I wish more farmers would start selling their own veg that the supermarkets won't give them a fair price for. Surely a couple of enterprising guys can get their heads together, decide what to grow and get themselves a van and a fruit&veg round - lots of people would appreciate it.

    There has to be a 'happy compromise' between what they say the supermarkets will pay and what the supermarkets actually charge - and I don't mean the 'silly prices' that some Farmers' Markets manage to come up with!

    Just a thought though, maybe local authorities would put some kind of stumbling blocks in their way.

    I have happy memories from when I was younger of a fruit and veg man. He would come round on a sunday in his van (not a white-van-man one, the big ones) which was all kitted out with shelves inside and everyone would come down from their flats (this was overseas) and get stuck in. It was fabulous.

    PS, I'm only 24, so it wasn't that long ago.
