Pretty much as the title says - I want a good tasty cheese sauce recipe - the ones I've tried in the past always seem to be a bit bland and floury.

Hi earthmother,
I make a cheats cheese sauce. Warm milk in the pan, add seasoning (pepper and parsley), mix some cornflour with cold water or milk. Pour it in gently and whisk well to make sure there are no lumps. Finally, add grated cheese.
There's a thread with many other ideas that should help so I'll merge your thread with it.

Edit, I forgot to mention mustard powder.......if you add a little it really enhances the flavour of the cheese so you need less cheese = moneysaving.0 -

Any fish goes well with cheese sauce but my favourite is white fish such as cod or haddock.

I am making macaroni for my 2 yr old as she wont each much else, only problem is I have just discovered I have no flour!!!!
Can I use semolina to thicken the cheese sauce or will it taste funny?
I will only make 1 portion for her just incase but I don't have anything else to use and cant get out to the shops.
She has had weetabix for tea for the last 2 nights as she just wont eat what we are having.
Please let me know if I can do this.

Not sure about semolina - would imagine that it would work but taste different. Maybe not so noticeable with enough strong cheddar, though?
That said, children WILL eat what you're having. But only if they're hungry enough! Letting them fill up with cereal if they're fussy about what's on their plate at dinner time is only making life difficult for yourself in the long term. Don't ask me how I know this.0 -
Hi I am not sure if you can use semolina to thicken it, I think I would be inclined to grate some cheese and put it in a small saucepan with a table spoon full of milk, just heat it for a small while, and you will have a cheese sauce of sorts. this is how I do my cheese on toast but add mustard and worstershire sauce, (not for two year olds though :rolleyes: ). I appreciate what you are saying but we have tried everything - we don't just let her fill up on cereal she has to eat something and it is always given well after meal time so she doesn't see it as just a substitution for what is on offer.
I am looking for advice on cooking not parenting.

Hmm! Well, the point is that they learn very quickly that they can miss dinner because there'll be cereal before bed. Like I suggested, I learned this the hard way.;)
Anyway, redruby's reply reminded me that one of my fussy children's favourite meals was pasta, peas and sweetcorn in a smidgeon of tomato sauce (the right kind of course) with grated cheese mixed in. The cheese melts if it's added to the hot pasta and, while it's not a sauce as such, it coats the pasta.0
