I've a method that I think is foolproof - it works 100% of the time for me, can't rmember where I got it from. (I'm wheatfree and my DH can't tell that this is not 'real flour')
in a Big glass bowl put 1 tablespoonful of butter,
2 tblspoonsful cornflour
about a pint of milk (I judge this by eye now)
salt
put it all in the bowl and give it a quick mix with a whisk then put in th e micro on high for 1 1/2 min
take it out whisk again and put it back in for 1 min,
keep doing this 4 or 5 times til it looks nice and thick and you're ready to add any flavours that you like.
I've never had this fail adn I've taught my kid how to do it and that's one of his 2 dinners that he makes now as macaroni cheese.
It also freezes well if you've any leftoverJust call me Nodwah the thread killer0 -

Pour into saucepan, heat until it comes to the boil stirring all the time, let boil for a minute then simmer for a few more minutes, still stirring.
I usually add some chicken or veg. stock powder and a tiny bit of mustard powder as well for a nicer flavour.
You can do all sort like this - onion sauce, custard, white sauce, etc. all really easy. I can post the recipes if anyone is interested.

Another vote for the balloon whisk! I use it to get rid of any thick bits/lumps, then transfer to a wooden spoon so I can get into the edges of the pan.May all your dots fall silently to the ground.0

My favourite cheese sauce is just literally a tablespoon of milk warmed in a pan, stir in and gently heat through a tub of healthy living creme fraiche. Add a large dollop of grated cheddar or lancashire cheese and stir till melted. Season. Could add alittle mustard but tasty enough in my opinion.
Gorgeous and tangy. Lovely on cauliflower or fish.
Sometimes omit the cheese and add chopped parsley or tarragon.Thank you for this site :jNow OH and I are both retired, MSE is a Godsend0
