  • Hello all, some delicious mealplanning going on this week! My mealplan this week is based around rice, I realised the other day how much I enjoy rice and I haven't been having it for ages, so I'm overcompensating this week.
    • Mon 16th - lunch: garlic and herb cream cheese pitta bread, dinner: HM chilli con carne (recipe from bbcgoodfood.com) with rice, sour cream and nacho chips
    • Tue 17th - lunch: pizza pitta bread with pineapple and onion, dinner: HM chilli nachos with sour cream
    • Wed 18th - lunch: baked potato with tuna and cheese, dinner: creamy rice with ham and peas
    • Thu 19th - lunch: tuna and cheese pitta bread, dinner: vegetable omelette and chips (I found a recipe that involves making the omelette in a ziplock bag in boiling water, so going to give that a whirl... fed up of cooking omelettes and ending up with scrambled egg!)
    • Fri 20th - lunch: garlic and cream cheese pitta bread, dinner: creamy rice with ham and peas
    • Sat 21st - lunch: super noodles, dinner: piquant steak and chips
    • Sun 22nd - lunch: pesto pasta, dinner: toad in the hole with carrots, peas and baby potatoes
Snacks: I'm making up a batch of brownies again this week, and have in loads of bananas/apples/grapes/carrots for snacks. Also have some crisps, and a frozen batch of biscuit dough in case I get hungry.

As you can see, this week I bought pitta bread instead of a bread loaf. I don't have freezer space for bread and I'm fed up of eating a whole loaf myself... even more fed up of throwing green bread out!

Champy, I am not sure yet as it is going to be an experiment. But I am thinking of two tins of chopped tomatoes, one tablespoon of maple syrup, one bramley apple and a small onion all mixed together. Then I will add some cooked meat from the hock and some beans and put it all in an oven proof dish and cook on a lowish heat for about an hour.

newlywed's leek and butterbean bake ;)

    Spanish baked eggs
fry some chopped red onion, red pepper and chorizo (optional)
add tomato puree and a tin of chopped tomatoes; simmer and then transfer to a baking dish
using the back of a spoon, make wells in the mixture and carefully crack an egg into each
bake for about 15 mins or until the eggs have set

On Thursday; I've not decided yet  but, I'm going to do either:

    red lentil koftas
cook 1 cup red lentils in stock/water for about 25mins, or until all the liquid has been absorbed
meanwhile, fry some finely chopped onion for 10 minutes, or until soft
mix together the onion, cooked lentils and 1 tbsp curry powder
using wet hands, shape into walnut sized balls
fry for a few minutes and serve

    or

    red lentil balls (mercimek koftesi)
cook 1 cup red lentils in 4 cups stock/water for 20 minutes
add 1 cup bulgar wheat and cook for 2 minutes
turn off the heat and allow to stand for 20 minutes
meanwhile, fry some finely chopped onion for 10 minutes, or until soft
mix all the ingredients together, adding some tomato puree, paprika and cumin
using wet hands, shape into walnut sized balls and serve
    Brill, thank you.
I am not doing a full weeks plan but ad libing!
The first option for the lentils sounds easy so will go for that......mmm.
I think we might be having the spanish eggs soon as they sound yuuuuummmmmyyyyyy.
    Thanks so much.

ETA so far this week we have had:
Sunday: out for lunch (I had fish and was scrummy, DH had steak and ale pie!)
    Monday: Vegetable Chow Mein
Tuesday: Sausage rolls, beer battered chips and beans
Wednesday: Stuffed pasta with HM carbonara sauce and HM garlic ciabatta
Thursday: Pork with honey and mustard sauce, potatoes and carrot batons
    And are now having:
Friday: Chilli and sour cream wraps with wedges
Saturday: HM Pancakes stuffed with chicken and tomato stroganoff, croquettes and salad
