Aw you are all very kind. Truth of it is, if I didn't plan for lunches/breakfasts/snacks etc as ewll as dinners then I would be useless and would flounder about the kitchen complaining there was nothing in despite full cupboards :o Besides, I like meal planning - I think about food a lot :D

    Hiya,

  • The usual Fri night adjustments have been made and next week's plan done. I do find myself making alterations, but still find menu planning for the month helps enormously.

    All breakfasts
Me porridge or muesli/OH wholemeal toast.

    Weekday lunches
Me HM soup, leftovers or sandwich from home/OH wholemeal ham & salad sandwich provided by school as he supervises lunch time.

    Dinner

FRI (changed) OH and DGS M&S lattice pies & chips, me M&S moussaka and chips.

SAT Lamb chops, potatoes, cabbage and carrots. DGSs favourite (he makes the mint sauce :rotfl: )

SUN Sweet & sour chicken, rice and stir fried veggies. (postponed from Fri)

MON Baked trout with HM herby wedges.

TUES HM veggie soup of some kind with crusty bread.

WED HM Chicken saag, rice and HM bombay aloo, with HM garlic bread.

THURS Salmon in my George grill, new potatoes and green beans.

FRI OH pizza and salad, me spanish omelette.

    As I always say "that's the plan ;) "

newlywed's leek and butterbean bake ;)

    Spanish baked eggs
fry some chopped red onion, red pepper and chorizo (optional)
add tomato puree and a tin of chopped tomatoes; simmer and then transfer to a baking dish
using the back of a spoon, make wells in the mixture and carefully crack an egg into each
bake for about 15 mins or until the eggs have set

On Thursday; I've not decided yet  but, I'm going to do either:

    red lentil koftas
cook 1 cup red lentils in stock/water for about 25mins, or until all the liquid has been absorbed
meanwhile, fry some finely chopped onion for 10 minutes, or until soft
mix together the onion, cooked lentils and 1 tbsp curry powder
using wet hands, shape into walnut sized balls
fry for a few minutes and serve

    or

    red lentil balls (mercimek koftesi)
cook 1 cup red lentils in 4 cups stock/water for 20 minutes
add 1 cup bulgar wheat and cook for 2 minutes
turn off the heat and allow to stand for 20 minutes
meanwhile, fry some finely chopped onion for 10 minutes, or until soft
mix all the ingredients together, adding some tomato puree, paprika and cumin
using wet hands, shape into walnut sized balls and serve
