Good morning,
I can't remember who was looking for sardine recipes last week in daily chat but I've found one in a great cookbook that I got from the library this week. It's called The Frugal Cook by Fiona Beckett. Her website is www.beyondbakedbeans.com it's got lots of cheap, easy recipes on it.
Anyway here it is:
Sardine Rillettes with Lemon & Parsley
This is basically jazzed up sardines on toast (very good for you - lots of calcium & omega 3) with a little finely grated lemon rind.
1 can of sardines
Grated rind of half a small lemon
1 Tsp chopped capers and/or 1-2 small gherkins chopped
2 Tbsp chopped parsley
freshly ground black pepper
1 large or 2 smaller slices wholemeal or granary bread
A little olive oil - optional
Drain the sardines, put them in a bowl & mash roughly.
Add the lemon rind, capers and/or gherkins & parsley (saving some for decoration) and season well with pepper.
Toast the bread, trickle over a little olive oil, if using, and pile the mashed sardines on top of the toast.
Sprinkle over the remaining parsley.
Hope this of some use. I think I'd prefer it on some oatcakes or as a dip. It does sound lovely though.

Hi Sunnygirl, it was me .I seem to have several tins of Pichards and Sardines in my store cupboard.Thanks for the link, I have put it in my favourites.It looks like a really good site. I will also try to get the cook book from the library.The recipe looks really great, I have a jar of stuffed olives left from Christmas so perhaps I can substitute the capers/gherkins for them

This site certainly is fab, it seeps into your consciousness without you realising it! I was laid in bed at 2am this morning reading the book & when I saw the recipe a lightbulb went on LOL.0 -
I bought a tin of sardines in brine for some strange reason when I was shopping. I have no idea what to do with them and to be honest, the thought of small crunchy bone-filled fish really don't appeal to me (I know...why did I buy them?
)
I'm not a hug fan of fish anyway, I can cope with salmon, tuna and prawns (and the usual fish in batter/breadcrumbs), but that's about all i've tried.
So, any ideas on what I can do with them that may disguise the texture? I expect they'll taste rather fishy, but it's mainly the texture that is putting me off trying them.
If not, i'll take them to my dad as he likes them and i'd rather not waste them :PGrocery challenge - Nov: £52/£100

I love sardines, so maybe not the best person to give advice...you could make some pate by draining them and mixing with some soft cheese....Lidl and Aldi do quite cheap ones, 69c here so maybe 50p in UK, don't use salt in seasoning as they will be salty from the brine, but be generous with the pepper and maybe some coriander or fennel if you have either.

Drain the sardines, add in some tomato puree, chop a potato into sticks, throw in some curry powder, a dash of coriander herbs and stir in a bit of veggie oil. Then serve with rice and a slice of lemon.

Hmm, I think i'll give that a miss, the thought of cheese and fish together sounds very odd! :undecided (I'm not a particularly fussy eater, but I sound like it on here).

lol, I did wonder when buying it if brine was a good idea. I suppose i'm used to buying tuna in brine, so stuck with that idea.

Mash them up with mayo and a dash of ketchup and have them in a sarnie.
The ones in tomato sauce are much better though. I do buy the plain ones in oil but that's because I have cats. They get a tin of own brand sardines in oil once a week between them and it gives them nice shiney coats. So if you really don't fancy your sardines, pass them onto your neighbourhood moggie.
My mum used to make curry with tinned mackerel, btw. Take my advice and don't go there. One reason I learned to cook at an early age was in defence against my mum's cooking!Val.0
