  • Well, I regularly buy a small, cheap ASDA SmartPrice whole chicken and "rubberise" it, ie. stretch it as far as as I can.

For example, on Sunday, my Mum has a breast and I have a leg/thigh with a roast dinner. I then freeze the other breast for 500ml (2 servings) of chicken & sweetcorn soup. I will have the other leg/thigh for dinner on Monday. Then, I boil up the carcass to make a litre of chicken soup.

Two Christmasses ago, we "splashed out" on a free range organic chicken from a local farm shop. Very expensive. Most disappointing. Never again.

I usually get chicken thighs, I prefer breast really as I am a bit squeamish about veins but I read recently that the dark meat has a lot more iron in it and as I have a 1 year old that is important to me.
It is really cheap compared to breast that I used to get and it is less dry.

Having said that I am guilty of buying three Asda £2 chickens this week.

Useful intel'. I think a little detour to ASDA after work tomorrow is in order. Pop it in the freezer, and that will be next Sunday and most of next week sorted.
