    Pan fry the chicken till brown. Remove> Add onions and mushrooms, garlic and soften. Add the chicken back to the pan and add the juice and zest of an orange and a big glass of red wine. Cover and simmer till cooked adding a littloe stock or water if necessary.At the last minute stir in a big spoon of redcurrant jelly (or cranberry or crab apple etc)
