Chicken and Red Wine?

Hi All,
I have loads of chicken portions in the freezer (on the bone ones) and I have a really nice half bottle of red wine to use for cooking. Does anyone know any recepies involving both of these that I can do for Valentine's day this week?
Can't afford to go out and buy any expensive ingredient's, so wanted to make a special meal with what I have in.

If you have a slow cooker just bung it in and leave it! Garlic too if you like garlic. Mushrooms if you have any. Search for 'coq au vin' recipes.Member no.1 of the 'I'm not in a clique' group :rotfl:

If it's a "nice" half bottle of red why waste it in the cooking - drink it and find something else for the chickenI haven't got one!0

I did a really nice coq au vin type thing the other day with chicken thighs and one of those cans of red wine.I sauteed some shallots and garlic in a little butter and olive oil,then added the skinned chicken,a tbsp tomato puree and the wine.I cooked it in a casserole for about an hour.0

A really simple red wine sauce is 1/2 glass of red wine with a knob of butter, just cook in a saucepan for a few minutes to thicken, then pour over your cooked chicken!! Very tasty, quick and easy!!!!0

Ohh, I have half a bottle of "british" red leftover from last nights beef bourgingnon (Sp?) & chicken in the freezer so I could do this too!

That's a great idea, think I will cook off the chicken portions then make this sauce to go over them.
The bottle of red has been open for about 10 days, so probably not too nice to drink, but will be fine for cooking.

Really nice sticky "Chinese" chicken:
Bung tblsps red wine; 3 tblsps soy sauce; 1 tblsp water; 1 tlbsp sugar; 1 tsp made mustard into a casserole. Stir. Add chicken thighs and swoosh round so they all get a bit of sauce on. Bung in oven gas 5 about 1 hour (till it starts to smell nice). Take lid off casserole. Cook another half an hour to brown the chicken. Serve with mashed potatoes to mop up the sauce or rice. Yum! Also, you can make this the day before, let go cold, and then reheat - even tastier (and you can take off any fat that way). I use 8 thighs for four people but you can use as many or as few as you like - it produces quite a lot of sauce. Everyone likes this!0 -
