I came across this thread when i googled diet coke chicken. I'm making this tonight for the first time and the recipe i found for it is
a can of diet coke
250ml of ketchup
3 tblespns of chilli sauce
3 tblespns of soy sauce
going to serve it with fried sliced spuds and onions0 -
Does anyone out there have a recipe for chicken cooked in diet coke? My son keeps mentioning this and thought we give it a try.0

Seal 2 sliced chicken breasts in spray oil with a finely chopped onion, add a teaspoon of Chinese 5 spice, an oxo cube, splash of soy sauce, splash of Worcester sauce, crushed clove of garlic, small tin chopped tomatoes, some sliced/chopped peppers and a can of diet coke . Simmer for about 20 mins/half an hour and job's done. I made it the other night and had it with noodles, it was lovely!RIP Iain

I do this a lot in my wood fired oven, but use a bottle of beer, well actually half a bottle. You can use wine, water, coke, any liquid that you like. I tend to marinade chicken overnight in a ziplock bag to get a good flavour in there.
Everyone seems to really love it. Here is a recipe to do in a normal oven.

I've done both gammon and chicken, in regular and diet (gammon in cherry cola is v nice too) and they are all lush!Bossymoo
