What about Sausage Pie?
Use sausage meat (not in the casings) ans stretch to high heaven with soya mince, lentils etc. Put in the bottom of a casserole dish and add a tin of baked beans with liquid.
Top with mash as in Shepherd's pie and cook. It is a full meal for small appetities but veg can be served for the ravenous!0 -
what about something like brasied liver , or liver and bacon . with mash and veg.
not sure if it's the type of thing your looking for but liver has always been very cheap, and often you get alot for your money.
i love dumplins. so if i was making liver and bacon. i'd fry the liver once coated in flour and add to slow cooker, then cook the bacon and the onions, again add to slow cooker. then i'd make a gravy in the frying pan with juices from bacon and liver. then about an hour before serving i'd make dumpling and add to slow cooker.0 -
Morrisons pork hocks are sublime when braised for several hours.
By the way I'm insulin dependant diabetic and manage puddings and cakes, all hm I must admit, but there are a lot of recipes on the diabeties uk web site to give you ideas.
Try going low GI it's good for keeping you fuller for longer and good for diabetes.
hope that helps

Amazing site, amazing people. Thanks !! Some of this I already do, but getting other people's ideas always gives inspiration . I think the cost of food can only get worse, and am wondering if this weird weather (snowing outside as I speak) will cause shortages/price hikes this coming winter. So I figured the way to go is looking to the past, when money was always in short supply & food was healthier. I have written down all these ideas and will sort out a menu plan asap. TYoooo !0

Hi Mardatha
When we REALLY cut back a few years back, I found it best to simplify meals and keep them basic. We had the same meals pretty much the same each week for a while and even now, I revert back to it occasionally. Goes something like this:
Mon-Sausages (Toad In Hole/Cassarole/Plain) with mash and veg
Tues-Shepherds Pie & Veg
Wed-HM Quiche, boiled spuds & veg
Thurs-Free meal (Egg & Chips that we have in anyway)
Fri-Chops, Spuds & Veg
Sat-Spagbol (make double for following week)
Sun-Roast with spuds & veg
Meat can sometimes be stretched and always buy veggies in season or frozen. Spuds you can buy a sack and store in a dark, dry place.
Chops seem to be reasonable much of the year and I cook them (even cheapie ones) slowly in a cream of mushroom soup and that doubles as the gravy too and is delish. Spagbol, Shepherds pie etc can be doubled up and streched to freeze for following week.
Ham hock to makes pies and soups?
I do a savoury pasta which mum used to make. Basically, an onion, mince lamb or beef, pasta and baked beans with grated cheddar on top. Boil pasta and cook onion with meat and beans, then add together and grate some cheese over....very cheap and filling and can be frozen.
Buy a slightly bigger chicken and make another meal from it.
We eat mainly meat, spuds and 2-3 veg for our meals too.

I have to REALLY cut back now
I do make good soup, we always have HM soup, we always have porridge. These are two great fillers. I would like semolina or rice pud as well but he cant have that.
I got sidetracked onto one of those older threads -to a link to childrens' memories of WW2 & boy does it make our lives seem so much easier, and make me feel ashamed of fussing..0 -
My dad is diabetic and my mum makes him semolina, rice pudding, custard and tapioca but makes it without sugar. It does take a little getting used to but you could always sprinkle a little sugar on your portion.0
