What about neck of lamb stew? - you need very little meat to give a lot of flavour. Add onions, potatoes, carrots, plus anything else like swede, parsnip etc, depending on the time of year.

A Second World War cookbook - so with some very basic recipes you might like to write out....and I dont theeenk any of them involve your pet hate (ie kale):rotfl:

Stovies is sausages, potatoes, onions, - that sort of thing, sliced thin and cooked slow with gravy powder.0

My mum used to make a layered dish of sliced potatoes , onions , white cabbage with a few rashers of bacon in and some stock, well pressed down, covered and cooked slowly. I seem to recall her doing it in a saucepan on the cooker top, although I do something similar in the oven with tightly covered in foil. Just a very small amount of smoked bacon seems to impart a lot of flavour to the rest of the ingredients.
She also used a very small tin of pink salmon (and I mean the teeniest size!), flaked into lots of thickish parsley sauce and topped with mash to make a very economical but delicious fish pie.0 -
Yes, I seemed to get a lot of cabbage type things too. I will try this - the OH is low on iron and severely anaemic so the cabbage might help with that.0

A little glass of orange juice drunk with the meal assists the body in maximising the absorption of iron from iron-rich veg and the darker green cabbage would be better for him!
Also, what about HM meatballs, made with any type of minced meat, a raw egg, maybe a little finely chopped onion plenty of seasoning and lots and lots of HM breadcrumbs to bulk out. You could make them and freeze them. They would stretch the meat quite well I think and are quite a hearty meal! If you used turkey mince, you could bulk out with some sage and onion stuffing too. Serve with mash, veg and lashings of gravy!
He sounds like he shares the same tastes as my dad, who never quite could get to grips with the "foreign fancy" for pasta or rice instead of spuds!0 -
Bacon, onion & potato hotpot, it's from The Paupers Cook Book, just the 3 items mentioned, in a white sauce, cooked in the oven or slow cooker.
