    Hi DiHunney - And Welcome!
    The soup was eaasy peasy!


    Sweet Potato and Red Pepper Soup
    2 large sweet potatoes
    2 red peppers
    1 onion
    2 chicken (or veg) stock cubes - 2 pints boiling water

    Gently fry onion and pepper until soft. Peel and cut sweet potato into small chunks.Add to pot along with 2 pints stock. Gently simmer for approx 30 mins(until potato soft). I bunged mine all in the blender as I prefer it that way but I guess that personal preference.
    It was really lovely - I actually had the last of it over pasta and a little bit of salmon for my dinner (I kept it quite thick - you could add more water to make it a thinner consistency)

    Whooops! After weigh in last night, put on 1.5lbs. Just 3lbs more and I'm back to where I started originally, soooo annoyed with myself.

    Nix, did you weigh yourself when you got back from weigh-in last night then?

    The reason I ask, you will be different weights at different times throughout the day so it's best to just weigh once a week
    I haven't got one!

    No cheekymole, the 1.5 I put on was my recording last night at SW. I'm afraid I'm a compulsive weigher though - just HAVE to weigh every morning and twice usually on weigh in day, there's just no way I could not get on my scales for a week - silly I know but I have to.

    Hello, can i join this thread too? I joined weightwatchers this week. Does it have to be slimming world to post here or is any-one welcome that is trying to lose some weight?

    :j Yay - 3lb off this week!!!

    Honey - that recipe looks great for a sauce. I love sweet potatoes

    Lydia - damage limitation is best. Think how you'll feel after the wedding. Cut down today at least and you won't feel too bad next week afterwards ;)

    DiHunny - think of it this way - you managed to give up smoking which is really hard. Therefore you know you have the willpower to watch what you eat :) You know you'll get there in the end :)

    Sue - you've done fantastically well. Thank you for the offer of support. That's what's great about this thread - everyone here is so supportive. After all, we're all here for the same thing and trying to work hard at it.

    Has anyone tried the cauliflower recipe from the 'family' leaflet attached to the new magazine? Oh great ....... I don't know where I've put it now:rolleyes: ....... I think it was basically leftover cauli, broccoli and courgettes stirred into cottage cheese, topped with some sliced new pots and some grated cheese and baked in the oven. Hope to try it tonight without the courgettes though.

    Well off for a:coffee: and to write out my shopping list- must remember the red peppers!
