My gran use to have 2 duck eggs for breakfast for years and years, and she died at 95 years old!
I remember her telling me 'when I was a girl..............and telling me about collecting eggs when she was about 10, so duck eggs clearly did her no harm.
But like all foods, if it smells off then it proberly is and cook everything correctly, then you shouldn't have any problems.Breast Cancer Now 100 miles October 2022 100 / 100miles

Hi GreenandThrifty,
Just use them as you would any other eggs but as they are larger you may need to use less when baking.
There's an earlier thread with more ideas so I've add your post to it to keep teh suggestions together.

No-one has mentioned just frying them. That way, you can fully appreciate the difference from a chicken egg. They look (and taste) like an egg should - just like a child's drawing of a fried egg - a solid pure white "white" with a bright yellow-orange hemispherical yolk.
PS. With Easter coming up, I regularly give my daughter 6 free range (ie. you have try not to run over them, when driving to the farm shop!) duck eggs, instead of a chocolate one.The acquisition of wealth is no longer the driving force in my life.0 -
Fried duck eggs on oatcakes are the best meal ever imo.Anyone who lives within their means suffers from a lack of imagination:beer:

Now I have ducks I'm getting an egg a day and wondering how well they cook in things other than cakes.
How long does it take to boil a duck egg and do they go well in quiches and frittatas?0 -
Hi Gigervamp,
This thread should give you some ideas:

I'll add your thread to that one later to keep the suggestions together.

Hugh Fearnley-Whittingstall did boiled duck eggs, with boiled asparagus spears as "soldiers".The acquisition of wealth is no longer the driving force in my life.0
