I love preserved duck eggs....I make up a brine solution and leave the duck eggs in it for 5 weeks. Drain, rinse and store in cool place. Boil for 10 mins whenever I fancy one; they (obviously!) take on a 'salty' taste so needs to be eaten with somethind eg rice etc. The whites have a delicate salty flavour and the yolks are wonderfully rich. I've tried this method with chicken's and quail's eggs but it doesn't seem to work for some reason.I have the mind of a criminal genius. I keep it in the freezer next to Mother....0

did i read here somewhere that you have to be careful with duckeggs as they are very porous and muck and stuff can get through the shell ?0

Yes. You did. I'm not quite sure which thread, but it was a recent one. Maybe in the question asked by MSE Sue about ducks and goats and things.

i have chickens and ducks, and i must admit i love duck eggs for cooking cakes, they give the cake a much richer texture. i have also hard boiled them, and pickled them to use them in the winter....cant wait for my ones to start laying again now.........happy cooking..... :dance:Work to live= not live to work0
