Left Over Cooked Basmati Rice - What will i use it for?

I made too much Basmati Rice tonight ( as usual) , also have a slow cooked chicken in the fridge ( got 3 for a fiver from butchers).
Any ideas what I could use it for??
Also can you only use short grain rice for rice pudding?

I just shove mine in the freezer in a food bag and reheat it in the microwave when I need it.Organised people are just too lazy to look for things

Cooked rice freezes well (there are a few threads on rice) but from personal experience I know it does and is then perfect for making egg fried rice (just defrost a little and seperate out the grains, but make sure you fry it really well and it's hot). You could also use it tomorrow for rice salad (mix in some chopped salad stuff and mix a little salad dressing in).
I would cool it and bung it in the fridge/freezer before you go to bed though as rice is dangerous stuff if left in the warm - bacteria will breed over each little grain (mince is also dangerous becasue it has a lot of surface area).£16,500 in debt.
New debt free date: 2015 (was 2046!!).

Drain a tin of chopped asparagus spears, lightly bake and chop some walnuts and mix together with the rice for a yummy salad. Goes great with quiche etc.My first reply was witty and intellectual but I lost it so you got this one instead

this is a really nice slightly spicy dressing for any rice salad, I like it best with something like Mrsbojangle's tuna recipe above
2 Tablespoons oil
1/2 teaspoon black/brown mustard seed
1/4 teaspoon ground cummin
1/2 teaspoon salt, only if peanuts are unsalted
pinch turmeric
2oz roasted peanuts, roughly crushed/ground
2 Tablespoons lemon juice
heat oil
fry mustard seeds till they pop
remove from heat & add cummin, salt if using & turmeric
cool, add nuts & lemon juice
good with rice or green salads

my mom used to make a sweet breakfast meal out of leftover rice
she'd add some butter and sugar or maple syrup then warm up

Reheating rice can be very dangerous
It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem – it's the way the rice has been stored before reheating.
Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.
So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.
It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.
Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once.
