    What is the best way to cool the rice quickly? You don't put it straight into the fridge when its still hot do you?

    I use the "Sushi Method" spread it out in a large tray and fan it with my copy of the Peoples Friend or my flat cap - It only takes a minute or two (seriously) ;)

    reading a question about pilau rice in another thread reminded me of these two recipes. not quite as nice as the real thing, but handy if you're in a hurry & have cooked rice to hand in the fridge or freezer

    Quick Pilau Rice

    cold boiled rice (8-12 oz dry weight)
    1/2 Tablespoon ghee or oil
    1 Tablespoon coconut powder
    1 Tablespoon ground almonds
    1 teaspoon whole fennel seeds
    1 teaspoon black/brown mustard seeds

    heat ghee/oil & stir fry spices for 30 seconds
    add other ingredients, stir & fry till piping hot


    Quick Lemon Pilau Rice

    cold boiled rice (8-12 oz dry weight)
    1/2 Tablespoon oil, mustard oil if you have it
    2 Tablespoons cashew nuts
    1 Tablespoon coconut powder
    juice of 2 lemons
    1 teaspoon whole fennel seeds
    1 teaspoon sesame seeds
    1/2-1 teaspoon turmeric
    6 curry leaves, crushed

    heat ghee/oil & stir fry cashews in hot oil till golden
    add spices & fry for 30 seconds
    add other ingredients, stir & fry till piping hot

    Put it in a sieve and place under the cold water tap and then put it into a fridge
  • I always make too much rice on purpose so I can make chinese chicken fried rice the next day, as you need cold rice for this. As Glad says though, you have to be very careful with rice.
