Hi bigmomma
I'm making fish pie tomorrow night, this is my recipe:
Ingredients:
Any fish ( I used a combination of white fish/salmon/prawns or whatever I have)
Milk
Grated cheese
Hard boiled egg
Frozen peas
Mashed potatoes
Method
Poach fish in milk
Remove fish and arrange in a deepish serving dish
Add quartered hard boiled eggs and frozen peas to the dish
Use the milk (that the fish was poached in) to make a white sauce (just use slaked cornflour if you don't want to make a roux)
Add grated cheese and black pepper to the sauce and pour over the fish/eggs/peas
Top with mashed potato
Pop into a hot oven for 20 mins or until the potato is golden.

Hi, I cheat by using a premade white lasagne sauce such as Dolmio or similar. I know it's easy to make a white sauce but I just prefer the flavour!0
-
In my lazier moments I use a can of condensed mushroom soup (not diluted) in place of white sauce.
Gives it a bit of extra flavour though!

To make a quick and easy white sauce, heat up some milk until warm but not boiling in a jug mix flour with some oil pour slowly into milk while whisking until thick add some salt and pepper to taste. I can't give exact quantities unfortunately as I use this at my work to make sauce for lasagne and we make lots at a time it is easy to judge.Lose 20lb in 12 weeks 5/200

I use Jamie Oliver's fish pie recipe
http://www.jamieoliver.com/recipes/fish-recipes/fish-pie
no white sauce and you don't need to poach the fish first. I don't necessarily use the fish selection from the recipe, just what I've got (last time it was a few prawns I had left in the freezer, a pack of salmon trimmings that were about 80p and a cod fillet)
hope this helps

If you want to cheat, powdered sauces are ok. I sometimes use the bisto parsley sauce, even though I am quite able to make a white sauce myself. I am just lazy, short of time, and it tastes ok. Sure, the proper home made sauce is nicer, but for a quick and easy supper the cheat is fine.Trust me - I'm NOT a doctor!0

I second Jamie Oliver's recipe. Delicious and hardly any washing up!0

I cheat quite often and make two pies at once for freezing.
Both pies have smoked haddock, salmon and some white fish amongst the ingredients, add garden peas and sweetcorn and then top with two tins of condensed soup mixed together. I mix chicken in white wine and cream of chicken, just pour it over the top undiluted and then i top with mashed cauliflower for a change sprinkled with grated cheese and ground black pepper. Absolutely lush and freezes very well.
