hi all, havent been about for a while but i am steadily cutting back on my shopping spends, i have just started meal planning for the week and only buying what we need rather than 'stocking up'. it means we are eating fresh stuff almost daily, but we should also get meals for the freezer too! i am also following the cook something new challenge and this brings me to my question....
the youngs mariners pie has the most delish thick yellow butter sauce and i wouild love to make this sauce myself to go with a new potato and fish dinner i have planned for later in the week, can anyone give me a recipe or know how to make it so its as near as poss? my oh doesnt like parsley sauce see, so this may be a solution!

depending what you want to do with it you could cheat and buy cod in butter sauce, this works well as a base for a fish pie of you are in a hurry.. or here is a recipe for butter sauce, which i imagine is the stuff you are after!!

I make a butter sauce but it is not so thick. I cook frozen fish fillets in the oven covered in decent stock, then reduce the remaining stock in a pan with a load of butter and salt and pepper. Sounds too simple, but is really tasty!0

Does anyone have a moneysaving but lovely recipe for a fish pie?. I've tried to google and haven't come up with much.

I don't have an official "recipe" as such but this is what I do:
Choose the dish you're serving the pie in. Oil it lightly.
Place a layer of fish in the base of the dish. I use a mixture of frozen white fish (coley is great, looks grey when raw but comes out white when cooked) and whoopsied salmon/smoked haddock. If you have some prawns handy, sprinkle a handful over the fish.
(Don't worry that the fish is raw; it will be cooked by having hot sauce poured over it and then being oven baked for 35 minutes.)
If you like eggs in fish pie, at this point boil 1-3 eggs for about 7 mins. Peel them carefully and halve them before adding them to the fish mixture.
I sometimes add a layer of fresh or frozen spinach over the fish. You could replace this with a very finely chopped leek.
Finely slice half an onion and scatter this over too, squeeze a lemon over the whole lot and season lightly with salt and pepper.
Now make a white sauce from scratch. If you have a bay leaf, put this in to give the sauce a delicious fresh scent. When the sauce has thickened, pour it over the fish mixture while it's still hot.
Top with mashed potatoand cook for about 35 mins at 180oC - if it isn't brown on top after that, stick it under the grill for a minute or two.
You can save fuel as well as time by peeling the potatoes first and boiling the eggs if you're using them at the same time as the potatoes!

Thanks for the recipes, I'll shall have a go at both of those i think!. My oh is always going on about having a fish pie and now I'm having a baby i want these kind of recipes in my head and off by heart.

would like to thank you both for your input! charliee's recipe is very very close - i think matbe a little too much w/wine vinegar - even after reducing it was still quite sharp, but the buttery flavour came through, so next time i wont use so much w/wine vinegar thanks both of you! :cool:0 -
I start by poaching my fish in milk with a knob of butter and some dill. I then use that milk as the base for the white sauce, removing the fish mix and placing in a dish.
To my fish mix (usually a white fish, some salmon and a smoked fish with some frozen prawns) I add some frozen peas, some sauteed onion and some milled pepper.
Pour over the white sauce (made with fishy milk lol) then top with mashed potato and bung in the oven for some time (sorry, I rarely time anything, just when it's "done")
I must do another one of these soon, my freezer has about 8 portions of reduced fish which i've been buying up for a fish pie but not got round to making!
