They make quite good burgers!!
Saute some onion and mix with the drained mashed beans and a couple of spoonfuls of sage and onion stuffing mix. Shape into burgers.
They used to go down quite well with my meat eating kids.0 -
Or if you like spicy food you could make Texas Caviare - basically its blackeyed peas, vinaigrette dressing, finely chopped tomatoes, peppers, onions - use either spring onions or red onion - crushed or very finely chopped garlic, a little v finely chopped fresh chili, ( omit if you don't like it too spicy and use cayenne or a dash of tabasco instead ). Some recipes add sweetcorm kernels and celery, and also fresh herbs - fresh coriander is really nice with it, as is a pinch of cumin and ground coriander. Mix all together and leave to mingle for a bit, best left for 24 hrs before serving to let the flavour develop. I haven't made it for a bit but I generally add a squeeze of fresh lemon and/or lime just before serving. You can serve it with tortillas or tortilla chips, potato wedges, jacket spuds, as a side salad etc etc." Baggy, and a bit loose at the seams.. "~ November 8th 2008. Now totally DEBT FREE !~0

Hi welshflipper,
I've bought polenta from Sainburys before, but probably all the supermarkets stock it...I think it was in the same isle as rice, and on the top shelf, so more difficult to spot. I think you can either buy it 'ready-made' in a block, or dried in a packet.
On the subject of American food (though possibly not very healthy) how about: Brownies
Chocolate chip cookies
Pretzels
Sweet potato pie
I borrowed a cookery book recently from my local library called American Regional Cookery, which had a lot of recipes from all over America...why not check to see if your library has a similar book to get lots of new ideas?
