    we used to eat this at boarding school. I went to a boarding school in Ivory Coast, which was very multicultural. 40 kids - 13 nationalities!

    Anyway we loved sloppy Joe's as a treat. Akind of bolognese mixture, possibly with kidney beans (more like chilli) that you ate on bread rolls like burgers. Messy but yummy. with lots of salad.

    I use all of the above actually. It just depends on what I have at the time. With boneless breasts, it will take less time to cook tho.

    Cornbread Recipe I've found it difficult to find cornmeal here, it is not corn flour. Finely ground polenta is basically the same thing and works just fine in the recipe.

    It is often eaten with chili, fried fish or any other southern usa meal.

    I buy maize flour in health food shops, which is the same as cornmeal. (Cornflour which you buy in supermarkets is what we call cornstarch in the States and is used as a thickener, not a flour.)

    Black-eyed peas are traditionally eaten in parts of the South on New Year's Day as they're supposed to bring good luck for the coming year -- so they would be a fitting food for the first day of the new administration! Although personally I'm not mad about their texture and do only eat them once or twice a year. They're good cooked with onions and spring greens or kale, just don't overcook or they break down into a very unpalatable mush. They're better when they're tender but haven't lost their shape.

    Hi right back at you. We do not have many health food shops near us which is probably why I've not seen it. There is one shop up in the town so will check there the next time I go.

    Right on the cornstarch (or as it's called here, cornflour.) I don't think that's make very palatable cornbread at all. :rotfl:

    Being from the south, we always had our black eyed peas with a ham hock cooked in with them. Gotta have that grease you know? LOL

  • i quite often do american themed menus at work, cornbread is great because its so stupidly simple to make! boston beans, corncobs, a 'slaw'. i make my southern fried chicken by soaking chicken pieces in milk with seasoning, and coating in breadcrumbs with paprika and oregano.
    pumpkin pie is a great pudding, even though its actually a traditional welsh recipe, from the gower peninsula!!!

    I've bought cornmeal at Tesco, Waitrose and health food shops. Once you know what you're looking for you can spot it under its other aliases;)
