I buy maize flour in health food shops, which is the same as cornmeal. (Cornflour which you buy in supermarkets is what we call cornstarch in the States and is used as a thickener, not a flour.)

I buy a brand called Dunn's River in Tesco's (it is a large store!) It's on the world foods aisle in the Caribbean section. It works really well for chilli cornbread.0 -

No-one has mentioned Chilli - chilli and cornbread is to die for!!! There are countless variations but I think in Texas people make it with chunks of beef rather than mince...
Crabcakes....make fishcakes but use some tinned crab...
Fried chicken - soul food
Jambalaya is nice - Like cross between paella and risotto
meatloaf in all it's forms
Mac n cheese
Burgers
Succotash - nice with fish!
Grits are singularly uninspiring - sorry
Sausages with scones and gravy
You can have blue blancmange and red jelly for breakfast - I learnt that at a Florida hotel buffet restaurant!!! It's quite nice.....:o
Pancakes with bacon and maple syrup
Roast Turkey with baked sweet potato and green beans
Boston Cream Pie
Cherry Pie and ice-cream
Angel Food Cake
Red Velvet Cake
Hummingbird cake...Oh god I love this one!
