    4oz margarine
    2oz sugar
    1 cup SR flour
    1 cup cornflakes or rice krispies
    1 cup dessicated coconut

    melt marg and sugar pour over dry ingredients mix together then press into tin 160 c for 20-25 mins leave to cool and cover with water icing or chocolate

    Ginger bake

    12 oz SR flour
    1 tsp ginger
    1tsp mixed spice
    6oz sugar
    4 oz margarine
    2 tbsp treacle
    1 egg
    1 cup milk

    Mix flour and spices. Beat sugar and margarine till fluffy, add treacle.Add dry ingredients, egg and milk. Pour into tin and bake for 45 mins @ 180c

    Mars Bar Cake

    Chops up some Mars Bars, throw into a bowl over hot water to melt, mix in some butter and syrup. By this time it looks like the dogs dinner but don't worry...

    Then stir in some rice crispies or corn flakes until they are covered in the chocolate mixture.

    Pour into tray until cold, then slice. You can cover in chocolate as well but I usually use plenty of Mars bars and so don't need the added chocolate icon7.gif

  • Ingredients
    225g/8oz soft margarine
    225g/8oz caster sugar
    275g/10oz self-raising flour
    2tsp baking powder
    4 eggs
    2 tbsp milk
    grated rind 2 lemons
    For the Icing:
    about 3 tbsp lemon juice
    225g/8oz icing sugar, sifted




    Method
    1. Preheat the oven to 180C/350F/Gas 4. Grease and base line a 30 x 23cm/12 x 9in roasting tin with greased greaseproof paper.
    2. Measure all the ingredients into a large bowl and beat well for about 2 minutes until well blended. Turn the mixture into the prepared tin and level the top.
    3. Bake in the preheated oven for about 35-40 minutes or until the cake has shrunk from the sides of the tin and springs back when pressed in the centre with your fingertips. Leave to cool in the tin.
    4. Mix together the lemon juice and icing sugar to give a runny consistency. Spread out evenly over the cake and leave to set.

    2 tbsp milk
    2 tbsp coffee essence
    85g/3oz walnuts, chopped
    For the icing:
    85g/3oz soft margarine
    225g/8oz icing sugar, sifted
    2 tsp milk
    2 tsp coffee essence
    walnut halves to decorate




    Method

    2. Place all the ingredients for the sponge into a large bowl and beat well for about 2 minutes until well blended. Turn the mixture into the prepared tin and level the top.
    3. Bake for about 35-40 minutes or until the cake has shrunk from the sides of the tin and springs back when pressed in the centre with your fingertips. Leave to cool in the tin.
    4. Make the icing beat together the margarine with the icing sugar, milk and coffee essence. Spread evenly over the cake using a palette knife, then decorate with the walnut halves.

    Variations:


    Caraway Triangles - simply add 2Tbsp caraway seeds to the basic sponge mixture; cook as above. Cool on a wire rack, dust with icing sugar and cut into ... triangles! :)

    Orange Syrup Cakes: - Basic sponge + 8 oranges + 6oz castor sugar.
    Grate rind and squeeze juice from 2 oranges, stir into sponge mixture and continue as per basic sponge.
    Slice remaining oranges. Heat sugar in 12floz/350ml water, bring to the boil, add oranges slices and simmer for 5-8mins.
    When cake has cooled, put the orange slices over the top of the uncut sponge and spoon the syrup over. Cut into 24 squares.

    Carrot and Walnut:
    basic sponge but replace castor sugar with light brown sugar.
    12oz/350g carrots (peeled and grated)
    4oz/125g chopped walnuts (+ 24 walnut halves to decorate)
    2tsp mixed spice
    Topping: 12oz/350g cream cheese, 3oz castor sugar, 2 Tbsp milk

    Simply add the carrots/chopped walnuts and spice to the basic sponge mixture but cook for approx 50-60mins. Remove from tin and cool.
    Beat all the topping ingredients together and spread over the cooled cake. Cut into 24 triangles and top each one with a walnut half.

    We make this as well, but we also melt a 200g bar of milky bar, 1oz butter together and spread on top of the mars bar mixture, tastes lovely with the mars bar!!!!

    Sorry if this makes me sound very dim , but what is a tray bake ?

    i have read lots of posta about people making tray bakes. one lady said she makes flapjack tray bakes . this has baffled me. at first i thought it meant it was cooked in a tray , but the figured it couldn't as a tray would prob melt in the oven and the side usually have handles.

    i guess it means it is bigger than a normal size , but please help me.

    i am not thick really , just never heard of what this is.

    It just means cooking then in a oblong shaped pan rather than a cake (round shaped) pan.

    Its usually a metal baking tray approx 13" x 8" with a 1 1/2 - 2" side - It is common to serve the item in the tray - well amongst the Americans I knew who were really keen on them did.
    A frosted tray bake was cut from the tray - saves having to wash up a serving plate anyway :T
