Traybakes

I would like some recipes for traybakes, i have bought the tray just need the ideas. i buy Delicious mag and next month traybakes are going to be featured but i can't wait that long. many thanks in advance. :)

    there's simialar recipe for choc, coffee brazil nut brownies which I haven't dared make yet as only just started addressing the Xmas weight gain :o

    Antoinette's Chocolate Brownies


    70g margarine
    100g dark chocolate
    170g caster sugar
    2 large eggs
    70g rice flour ( or plain flour)
    1 tsp baking powder
    1/4 tsp salt
    1/2 tsp vanilla
    70g chopped pecan nuts (optional)

    11 inch long, 1 inch deep rectangular baking tray, greased with sunflower oil.

    Preheat oven to 180 degrees C/ gas 4

    Melt margarine & chocolate in a saucepan over a low heat, stirring. Remove from heat, add the sugar and transfer to a mixing bowl. Let it cool slightly.

    Add the eggs, flour, baking powder, salt, then the vanilla and nuts.

    Pour into the tin and bake for 30 minutes. Cool in the tin and cut into squares

    Seed & coconut Flapjacks

    Ingredients
    150g / 5 ½ oz oats
    2 tbsp desiccated coconut
    1 tbsp sunflower seeds
    1 tbsp pumpkin seeds (roughly chopped)
    1tbsp linseeds ( or more of other seeds)
    25g / 1oz chopped dates (optional)
    3 tbsp golden syrup
    5 tbsp oil (sunflower or walnut)


    1. set oven 350 degrees F

    2. mix all dry ingredients together, add the syrup and the oil, and mix well

    3. press into greased tin and bake for 25-30 mins, cut into fingers and leave to cool in the tin.

    APRICOT BARS



    125g S R white flour

    60g sugar

    125g dried apricots

    90ml OJ

    2 eggs

    125g sultanas ( or apples….)



    • pre-heat oven to gas mark 4
    • mix flour + sugar
    • blend apricots with OJ
    • add apricot puree, eggs and sultanas ( or substitution) to flour and sugar. Mix.
    • Spoon into 18cm square baking tin. Bake for 35 mins until colour brown. Allow to cool, cut into 8 bars.



    CEREAL BARS


    6 oz oats

    3 oz muesli ( other cereal)

    5 oz dried fruit

    3 tbsp honey

    2 egg whites

    6 fl oz AJ



    1.[font=&quot] [/font]preheat oven to gas mark 4

    2.[font=&quot] [/font]combine oats, cereal and dried fruit in a bowl

    3.[font=&quot] [/font]warm honey until runny, add to bowl

    4.[font=&quot] [/font]stir in remaining ingredients

    5.[font=&quot] [/font]press into lightly greased oblong tin, bake for 20-25 mins, when cool cut into 12 bars.

    Lemon Cake

    Make a plain Victoria Sponge mix and cook off.

    When cooked but still warm pour over 1tbs granulated sugar mixed with 2tbs lemon juice. The multiples of the mix will depend on the surface of the tray, try X2 to begin with.

    The sugar stays on the top making a crunchy surface but the lemon juice soaks into the sponge and gives a delicate lemon flavour.

    think they are cakes or slices cooked in a tray rather than a deep tin
    WW Start Weight 18/04/12 = 19st 11lbs
    Weight today = 17st 6.5lbs
    Loss to date 32.5lbs!!!
  • Mars Bar Cake

    Chops up some Mars Bars, throw into a bowl over hot water to melt, mix in some butter and syrup. By this time it looks like the dogs dinner but don't worry...

    Then stir in some rice crispies or corn flakes until they are covered in the chocolate mixture.

    Pour into tray until cold, then slice. You can cover in chocolate as well but I usually use plenty of Mars bars and so don't need the added chocolate icon7.gif
