  • Recipe for Rice Cake

    8oz frozen puff pastry
    4oz pudding rice
    1 pint milk
    half pint single cream
    3 tablspoons sugar
    2 eggs
    2egg yolks
    1.5 oz candied peel
    2oz chopped glace cherries
    1oz chopped almonds
    2oz raisins

    Line a 9'' flan ring with the pastry, bake blind for 10 mins gas 6.
    Put milk, rice, cream and 2 tbsps sugar into pan, bring to boil, cover and simmer for 25 mins until rice is tender and liquid has been absorbed.
    Cool, then beat in the eggs and 1 egg yolk.
    Mix the dried fruit and nuts into the ricee mixture, spoon into the flancase, whisk remainng egg yolk with remaining sugar andpour over the top of the rice mixture.
    Bake or about 25 mins gs 6, cool, then sprinkle with icing sugar.

    I make this around Easter, it is a really lovely treat, I was given this recipe by an Austrian lady I knew many years ago, all her recipes were quite lovely.
