    Is short-grained rice suitable for risotto?

    It is a lot cheaper than the arborio rice, about half the price.

    I made my rice pudding yesterday. It's made with skimmed milk and artificial sweetener so quite low fat/low calorie. I peeled the skin off the top (yuk) and when I tried it, it was gorgeous. Must have been the skin putting me off when Grandma used to make it - she used to force us to eat the skin too. I don't have a slow cooker, but it did take 90 minutes in the oven - good way to keep the kitchen warm as someone else already suggested. I've already eaten 2 portions, so I can't see it hanging around for long.

    Hiya Everyone

    As you all are so knowledgeable I would like to pick you brains!!! I have found a pack of pudding rice hidden in my cupboard and was wondering if there was anything I could make with it except rice pudding (as the kids wont eat it). I was hoping for something cakey or biscuity.

    Has anyone got any ideas?

    I know it isnt cakey or biscuity but you can use pudding rice to make risotto quite successfully.

    I didnt know that. Thank you. I have just found a second bag of it so might be making risotto next week!

    Do you think if i made up rice pudding and mixed it with flour and maybe egg it and put in cake cases to bake it would come out cakey?

    My guess would be no.

    I think your best bet for getting something cakey or biscuity from the rice would be if you could grind the rice finely in a food processor or blender and then you could use it as a substitute for some of the flour in a recipe - or look up recipes using ground rice.

    How about seeing if a friend or relative would do you a swap for a bag of long-grain rice?
    Then you won't be wearing yourself out to find a use for this...it's not going to be a huge saving if you have to spend a lot of time working out what to do with it!
    Many people love rice pudding (including me). I love risotto too but don't think pudding rice would make nearly as good a risotto as an arborio rice, for instance.
    You could always donate the packet of rice to a pudding-loving friend, or if you like rice pudding, make some for yourself and freeze it in individual portions.

    Thanks MsB, I didnt even think about swapping it or freezing rice pudding. I could make rice pudding and freeze it using the open packet and swap the other packet for somthing.

    i will ask around.
