    hi all :D

    i am after ideas for a cheap but impressive looking pudding to feed 4 adults and 2 children at the weekend.

    i have a good storecupboard (flour, sugar etc) and a couple of boxes frozen. ready chopped tropical fruits if thats any use (dont have to use them though)
    i dont mind buying a few bits but dont want to spend much.

    any ideas?

    Just adapt the recipe to use the tinned fruit. Don't forget to drain it off well.

    If you are a confident cook you could make a meringue, top with the fruits and cream. Very impressive.

    Trifle? Dead easy. Make a nice sponge cake, cut into pieces - sandwiching two together at a time with some nice jam, and layer with the tropical fruit. Be warned - pineapple has an adverse effect on jelly so it might not set properly (if you have poineapple in your mix). If so, you could fish out the pineapple and use it as a topping on top of the custard and cream. I would probably go for an orange jelly with tropical fuit: make it up 1/2 water 1/2 fresh orange juice to give it more flavour. Top with either homemade or bought custard.

    Tropical crumble? You could put dessicated co!!!! into the crumble topping to caryy through the caribbean flavour.

    I don't know why the filter thought the filling in a Bounty bar is an expletive, but there you go.
  • i tend to make a fruit crumble.

    made one using some apples, pears (from organic box the week before and needed using up) the rind of an old orange and the juice and a tinof value peach slices.

    was very yummy and husband was very please
  • Profiteroles - they've much nicer fresh than shop-bought. Most of the ingredients are normal storecupboard stuff - flour, butter, eggs, sugar. Just need to buy chocolate and cream.

    I usually make a ganache as the chocolate sauce, just serve it in a separate bowl and let people help themselves.

    I would double the recipe in the link above for 6 people.

    I'd go for pavlova too. Or a recipe my mum used to make in the 70's:

    You'll need gingernut biscuits (tesco do value ones which are very cheap) Dip each biscuit in orange juice then spread one side with whipped cream and sandwich the biscuits together to form two long rolls. Use the rest of the cream to cover the rolls of biscuits and sprinkle with flaked chocolate (or you could use your tropical fruits). Keep in the fridge for a couple of hours and the biscuits go cake-like absorbing the flavour of the juice. If not serving kids it's good to add a splash of brandy or whisky to the orange juice.

    Now, "coconut" isn't an expletive - and is entirely fine. See? :)


    I fear you may have misspelled it, missing out the second "o" in "coco" and jumbling the letters of "nut" to make a very, very naughty word...... :eek:

    What about making semolina snow - make a pan of semolina and put a meringue topping on it.

    You can use the egg yolks in the semolina to give it a nice yellow colour and improve the flavour.
