I'm a decent baker, I sometimes sell cakes I've made, but I have a huge stumbling block in chocolate roulades.

Yule Log was never something that featured in my home at Christmas as a child, but DH loves it. does anyone have a foolproof choclate sponge that will roll recipe so for once I can make a really good one for him? Preferably one I can do in advance and freeze :o I plan to put chestnut spread as the ''filling''.

Alternatively, a chocolate meringue roulade recipe?
  • There are lots of yule log recipes here :)

This recipe is excellent for a meringue roulade.

I'll add this to the above link later to keep recipe ideas together.

    Thank you very much!
  • Hi all, I have promised my daughter we can make a yule log this afternoon.

We make cakes a lot but I have never made one of these.

    However, it requires a 23 x 32cm swiss roll tin. The only ones I have are 38 x 25 or 21 x 21

Do you think I would be ok using the large one?

Or has anybody got any other good recipes for a yule log they could share?

Not sure of the recipe, but the easiest thing to do would be to increase the quanities of the ingredients. You want to increase all the quantities by about a third and then use the larger tin. You may need to bake for a minute or two extra.
  • It's not a lot bigger - I'm sure it will be fine!
