Yes. I went to Lanzarote and, after shopping around decided to buy one from these people: http://www.spainsim.com.
I bought a pre-used Vodafone Spain card, with some credit already on it. Quite a saving over a new one, and you do not need to register it. Only downside is that I got a couple of calls, presumably for the previous owner. Once I changed the voicemail greeting to something in English, these stopped.
At the Canaries are part of spain, and Spanish sim card will be fine.[size=-2] If this post was unhelpful, please tell me.
