Appropriate this thread as I've just finished off last night's queen of puddings which I made for the first time today - mum used to make it and I love it so much - think it's supposed to be one of those use things from the store cupboard puddings. Bread I had was a bit stale and was crustry bread too so think some 'normal' fresh bread will make it work better.
Think I'm going to try and make a 'proper' pudding every Sunday as I love them and enjoy making them.

My mother used to make egg custard tart, but put a thin layer of plum jam at the bottom, and loads of nutmeg on the top. It just livened up the custard, and stopped the pastry going soggy. It had to be plum jam though, as other jam just didn't taste the same!!0

My grandma used to make macaroni pudding-I'd completely forgotten about it. She also made milk puddings with flaked tabioca and flaked rice-don't know if you can still buy them and a lovely boiled batter pudding with blackcurrants that she served with brown sugar sprinkled on top.

Good job it's nearly tea time - this thread is making me drool! We're having HG baked apples with HM mincemeat. Will definitely try the bread pudding next week. Like the look of the microwave puds, too. We have to restrict puddings to once a week, or I wouldn't be able to move :eek:
I love HM rice pudding - my sisters and I used to fight over the skin, but none of the other Penguins like it, so all for me

I absolutely love real puds. We don't have them much at home because I have a real weight problem if I am not careful.

I love winter puddings (bread and butter pud, treacle pud, sticky toffee pud etc). I did not grow up with them as school dinners (grew up in South Afrcia), and can't really enjoy them much now as I need to keep my weight down
, but I may try a bread and butter pud and try freezing it in portions - that would be great! :T

Ticklemouse do you have the recipe for the apple sponge you did handy ? Just I have loads of eating apples need using.

I have promised DP I will try the Bread pudding as he said he loves it and hasn't had it for years, will just reduce quantity as will only be for him and little DS.

i did a really nice variation on the microwave sponges tonight:
cored and chopped a pear, an apple and 2 plums. scooped into a microwaveable bowl with some sultanas, a couple teaspoons cinnamon and 2 tsp sugar. I then nuked for 10 minutes, stirring half way.
most of the fruit mix went into a plastic box to cool and go in the fridge (as i have it for breakfast with my porridge or on yoghurt for a pudding, so i've nearly always got some on the go) but tonight i left a little bit - a couple tablespoons, maybe 3 tablespoons of the fruit mix in the base of the bowl, then made a microwaveable sponge mix in another bowl, then scooped it on top of the fruit mix and nuked that all together.
proportions i used were: 2 oz of dark brown sugar - 2 oz butter - 4 oz self raising flour, 2 tsp vanilla (flavouring - you can use essence if you like but i'd use less of it than i've indicated here!), 1 egg, a slug of milk, and 1 tsp mixed spice.
cream the butter and dark brown sugar till its a pale creamy colour. In an old mug briefly whisk the milk, vanilla flavouring and egg. pour a little of the liquid into the butter/sugar mix, and a spoonful of the flour/mixed spice. whisk, and repeat till all the liquid has gone. at this point, go in with a spoon and fold in the remaining flour (I use the same recipe to make spotted !!!!!! btw, just folding in sultanas right before nuking).
i covered and nuked this for 4 minutes. just enough time to make some custard.
