I'm not sure about the mixture freezing, I meant that you should use it all up and freeze your extra pancakes. Ahh, I see. If I used it all up then I would just eat them when they were done. It wouldn't make that much mixture from just one egg though would it?0

I think I got six from that mix last time I used it. Thanks for all the advice, I made some pancakes as my back was a bit better and they were scrummy! So easy to make, I was well chuffed with the results.
Just one thing though, why do you have to leave the batter to rest before making them and is it better to fry them in oil or butter?0 -
the batter needs to rest to allow the flour to do it's job. As for frying, whichever you prefer really it's personal preference. I find though that butter burns unless you use clarified butter. Me personally, I use a drop of oil and add a knob of butter to give it the taste.

I think that freezing the mixture should be fine. Never done it myself - pancakes are far too nice and I can't save any for later but I know Aunt Bessies do frozen un-cooked Yorkshire puds in little foil tins - and Yorkshire batter is the same as pancake batter.

Ive frozen pancake mix and pancakes once cooked, and both have been fine, ive also frozen batter that ive made to make HM fish fingers and chicken nuggets, and that has always come out fine too, just a bit more watery, i just add a little more flour.

Not very OS this but who remembers those shake 'n' bake things?! You used to just add water then cook it. Horrible stuff!Comping, Clicking & Saving for Change0

Found this recipe on another site - its great. It's for the fluffy American style pancakes. It never fails.
- 1.5 cups SR flour, 3.5 tsp baking powder - both sifted then add 1 tbsp sugar, 1 tsp salt.
- add 1.25 cup milk, 1 egg, and 3 tbsp melted butter (although I reduce this and it works fine).
- Mix until smooth - don't overbeat the mix as it reduces the fluffiness of the pancake.
- Pour about half a cup of mixture into pan ( add more if want bigger pancake) - you may need to spread out a bit with a spoon as the mixture is quite thick.
- I add extra milk if the mixture is thickening too much - but it should still be reasonably thick.
- Make sure you have a non-stick surface for the pan0 -
