    I love my steel. Wouldn't sharpen my knives any other way.

    I take my knives to my dad and he sharpens them with a steel (i'm sure he loves it when I visit :p) Infact, you've just reminded me to take them tomorrow when I pop over as one seemed to be a bit blunt earlier!

  • my parents used to sharpen their knives on the stone doorstep! They had stories from the war years that people used to go outside and sharpen their knife so the neighbours could see then go inside and have a fried egg! Bit of snobbery even then!

    Reading your post reminded me that my mum used to sharpen knives on the back doorstep when we were kids, I'd completely forgotten that. I have an electric can opener with a knife sharpener on the back, but I do have a sharpening steel that I use sometimes, which I got as part of one of my best bargain buys years ago. I went to a car boot sale, and on one of the stalls there was a box of kitchen items, including a bread knife, a carving knife and fork set, various other kitchen knives, a set of corn on the cob holders, a bottle opener and a cork screw, I asked how much they were and was told I could have the lot for 20p, bargain, and came in very handy as I'd just recently moved into my first home! I still have most of the stuff over 20 years later, but the corn holders, bottle opener and cork screw went to the charity shop last year as part of my de-cluttering mission as I've never used them.

    I use a Steel to sharpen our knives if they are beyond that I take them to my dad who has a proper stone, he's a trained butcher and can sharpen knives very sharp!
    I also sharpen the knives at work, but someone always cuts there finger on them even though they've been warned!
    The girls even bring there knives from home in for me to sharpen - one of the girls is always on about the bloke who used to come round the streets sharpening knives (and she's only 62).

  • I always use a steel as does my dad, I think many people think it' difficult or scary having only seen telly chefs doing it very quickly and don't realise that you don't need to do it that fast. A sharp knife is also safer to use (although that might seem barmy) as you don't need to exert so much pressure to cut and risk the knife slipping.

    I agree with the point that sharp knives are safer - and continually try to explain this to family and friends who are scared of sharp knives! I also had to explain to my ex-OH that keeping knives in a drawer is a bad idea as you can put your hand in and cut yourself. He seemed to think that with kids about (10 & 16????) that keeping them out in a block was mor dangerous...

    I use a steel for daily sharpening (before each use), but have an electric knife grinder for re-grinding the edges if they get beyond that. Occasionally I take them to the butcher if they need regrinding properly.

    And I don't have a matching set of knives (people have finally given up asking whether I'd like a set for christmas/birthdays) I have individual knives carefully chosen for the things I need to use them for.

    I sharpen our knives with a steel, I had my Mums old one (1940s), for ages.

    Now that is cream crackered, we've bought a diamond dust ceramic one, it's brill, truly smashing.
