My son is partial to cold chicken dippers chopped carrot and cucumber sticks and a little pot of ketchup or mayo to dip them in, I use the little baby food pots I bought for my daughter.0

Cold little pies? I chop the leftovers of the Sunday roast small and use some shortcrust pastry and the gravy to make small lunch pies (in my yorkshire pudding tin in fact)0

Make some little muffins.
Cheese and onion, cheese and sweetcorn, cheese and spinach or cheese and courgette.
Or, blueberry, chocolate, banana etc.Felines are my favourite

Make this banana flapjack, it's amazing. Obviously not for a whole lunch but it is really filling and has quite a lot of fruit content!

My daughter starts school in September and will be taking packed lunches. I would love to get some ideas for snacks to go in her lunch box that are nice and healthy and cheap to make.

I work in a school and take packed lunches. I like to "ring the changes".
Next week, I will get two slices each of a different cooked meat for the main sandwiches. A pack of 6 tomatoes helps with the old "5 a day".
The week after next, I will get a pack of 10 cheese slices. At the moment, the Gouda ones are the cheapest. If I have a couple of the "6th" tomatoes to use up, I will alternate these with some Marmite.
ASDA do some nice 6-packs of muesli bars for under a £1 - again, I rotate the 3 varieties.
An apple, banana & orange make up most of the "5 a day". The orange might be a bit tricky for a child though.
At the moment, I also take a cold slice of this - it's very filling.
PASTA & COTTAGE CHEESE FLAN
Makes about 0.75L
INGREDIENTS
1 packet of pasta in sauce
Water
1 egg
200g pot of cottage cheese
Ground pepper to taste
METHOD
Make up the pasta in sauce, according to the instructions on the packet but replacing any milk with an equal quantity of water and omitting any butter.
Break the eggs into a bowl and pick out any bits of shell. Mix up the eggs. Add the cottage cheese. Mix up again. Season with the pepper.
Put the pasta and sauce into a flat ovenproof dish. Level off the surface. Leave to cool until the sauce has thickened. Put the egg and cottage cheese mixture on top. Spread to cover the pasta.
Cook in a preheated oven at 180°C, 350°F, gas mark 4 for 20 to 30 minutes until golden on top.
ADDITIONS & ALTERNATIVES
Put a sliced tomato on top. Use ‘quark’ instead of the cottage cheese.
Perhaps your daughter could choose the variety of pasta in sauce and maybe help with the cooking of it as well.The acquisition of wealth is no longer the driving force in my life.0 -
