    After all there lovely recipes I did my first round of baking today! I actually used the chocolate cake recipe to make chocolate chip buns. And they turned out ok... :)

    Will try a proper cake next time- bulding up to it!

    Just a thought, but a variation from your bun recipie, basic mix, stir in white choc chips, then add tablespoon of strawberry or raspberry jam, stir gently to create a swirl effect. xx

    [FONT=&quot]115g sugar[/FONT]
    [FONT=&quot]4tsp cocoa powder[/FONT]
    [FONT=&quot]1/2 tsp salt[/FONT]
    [FONT=&quot]170g plain flour[/FONT]
    [FONT=&quot]1 level tsp bicarbonate of soda[/FONT]
    [FONT=&quot]90ml vegetable oil[/FONT]
    [FONT=&quot]2tsp vanilla essence or flavouring[/FONT]
    [FONT=&quot]2tsp cider or wine vinegar[/FONT]
    [FONT=&quot]200ml cold water[/FONT]
    [FONT=&quot] [/FONT]
    [FONT=&quot]-sieve and mix dry ingredients in a bowl[/FONT]
    [FONT=&quot]-add wet ingredients and whisk briefly till combined[/FONT]
    [FONT=&quot]-pour into a cake tin and bake in preheated oven at 180 C for 30-40 mins, test with a knife and if it comes out clean your cake is ready.[/FONT]

    Banana Bread
    (great for using up those over ripe bananas)

    3 very ripe bananas (almost walking) or use defrosted frozen bananas! pinch of salt 6oz melted butter 1 teaspoon bicarb of soda dissolved in 1 tablespoon water 6 oz caster sugar 1 egg
    9 - 10 oz plain flour

    Smash bananas (food processor is great for this recipe). Add remaining ingredients, mix together. Pour into 2 greased or paper lined 1lb loaf tins or 1 lined 2lb tin. Bake in moderate oven (180C/350F/Gas mark 4) for 45 minutes. Will also make as muffins. Freezes well and is lovely sliced, toasted & dripping with melted butter.
    I have had lots and lots of praise when I have made these. All off recipe board or threads - cannot recommend enough.

    I got the following recipes from this board, somewhere and completely recommend as nothing needs to be beaten, just stirred together.
    Weetabix cake
    2 crushed Weetabix 1 cup of sultanas 2 cups of Self raising flour 1 cup of sugar

    Mix these dry ingredients together, then add 1 cup of milk and a teaspoon of mixed spice Stir again and pour the mix into a greased loaf tin, bake at 325 degrees for about 45 mins.

    Interesting. I may try this.

    I used to make Madeira Cake when I was younger. It always came out really well.

    We also used the old fashioned Be-Ro book for everything. Actually I wonder if I still have it. I may start a baking renaissance.

  • Do a lemon sponge, weigh 2 or 3 eggs in their shells, then cream together the same amount of sugar and butter, add the egss, mix and add the same weight in flour, the juice and zest of one lemon and bake in a loaf tin. once colled mix us some caster or granulated sugar with some lemon juice and drizzle over the cake. :)
