    I like this one http://www.recipetips.com/recipe-cards/t--1922/banana-bread.asp as my partner can't have much in the way of saturated fat.

    It uses vegetable oil which I tend to have around. I normally put in sultanas rather than nuts. It lasts for a week for the two of us - though my OH does have some substantial slices. It bakes in an hour in a 2lb loaf tin and if there's any left over when(if it got a chance to!) go stale it can be microwaved and served with custard. It's very moist too.

    Best of all it's a basic mix it up recipe. And I've used frozen, thawed bananas in it. Delicious!

    I could make it better myself at home. All I need is a small aubergine...

    I moved to Liverpool for a better life.
    And goodness, it's turned out to be better and busier!

    Just found this recipe for a tea loaf which I'm going to try tonight though I'll probably use bu8tter instead of marg. Gets better with keeping apparently:

    1 cup of sugar
    1 cup of mixed, dried fruit
    1 cup of cold tea
    1 teaspoon of mixed spice
    1oz of margarine
    2 cups of self-raising flour
    1 egg

    1 Put all the ingredients in a pan, bring to boil and then let it stand to cool down.
    2 Add the flour and egg and beat the mixture together.
    3 Pour into a loaf tin and bake at 180 for 90 minutes or until knife inserted is clear.

    Wow, so many cakes! I will have to limit myslef to one a week or else I will get fat(ter)! :rotfl:

    I like the sound of banana bread...

    Does anyone know how hard it is to make carrot cake?

    Hi ...this is a very easy and delicious carrot cake recipe...it never lasts long in this house

    1 cup s/r flour
    1 cup sugar
    1/4 tsp salt
    1 tsp baking powder
    1/2 cup oil
    1 tsp cinnamon
    1/2 tsp all spice
    2 eggs
    1 1/2 cups grated carrots

    Sift all dry ingredients
    Add oil and stir well (Stiff mix)
    Add eggs on at a time..mix well
    Add carrots and mix

    Bake 350/180 50-60 mins

    Icing
    1/8 cup Marg
    1 cup Icing sugar
    2oz cream cheese
    1/2 tsp vanilla essence

    Mix all together ....

    and hey presto and very moist and tasty cake...I cant go wrong:p Honest!

    see my post above..use the normal mix of flour eggs marge sugar but make a mix of milk and camp coffee liquid and mix that in with it..i love coffee cake
    TO FINISH LAST, FIRST YOU HAVE TO FINISH....

    which contains a ginger biscuit cake that I can heartily recomend after making it today and eating some, my OH was impressed to. Really cheap if you can get the value biscuits (which I couldn't but will next time!).

    Camp coffee liquid, is a liquid coffee, rather than granules, but you can get the same efffect by dissolving coffee granules in some water, about 2 tablespoons water to 2 teaspoons coffee. Add that to cake mixture.

    Can make a cake siminlar to Victoria sponge mix

    4 oz flour
    4 oz sugar
    4oz butter or marg
    2 eggs
    coffee mix

    whisk butter and sugar together
    add eggs gradually with a bit of flour
    finish off flour
    add coffee mix
    mix well

    Either go in sandwich tins, gas 4 20 to 30 mins
    and can sandwich with buttercream, or

    put in one tin, gas 4, 4o to 45 mins

    as said..Camp is a brand name of a coffee in liquid form, it has a more chicory taste too and its gorgeous made with milk.its in very traditional tall slim bottle,very ols fashioned product but makes great cakes
