    hmmm, i think i have most things, except vanilla. but do have cocoa, and possibly some chocolate chips hiding at the back of the cupboard! I could possibly attempt a basic chocolate cake. :)

    EASY FRUIT CAKE (ABSOLUTE DOODLE)
    350G / 12OZ MIXED FRUIT
    100G / 4OZ SUGAR
    100G / 4OZ BUTTER OR MARG
    150ML / 1/4PT WATER
    335G / 8OZ SELF RAISING FLOUR

    1. HEAT OVEN TO 150C 300F GAS 2
    2. GREASE AN 17CM / 7IN CAKE TIN
    3. PLACE FRUIT, SUGAR, MARG OR BUTTER, + WATER IN A PAN, SIMMER SLOWLY WITH THE LID ON FOR 20MINS
    4. ALLOW TO COOL, THEN ADD BEATEN EGG (ADDING BIT OF FLOUR), THEN ADD REMAINDER OF FLOUR
    5. STIR WELL
    POUR INTO PREPARED TIN AND BAKE FOR ABOUT 1 1/2HRS

    100G / 4OZ MARGARINE

    175G / 6OZ MIXED DRIED FRUIT
    3 MED EGGS
    2 X 15ML (2 TABLESPOONS) MILK

    1. HEAT OVEN TO 180C/350F/GAS 4
    2. GREASE AN 18CM (7IN) CAKE TIN
    3. MIX FLOOUR AND SALT, RUB IN MARG (LIKE MAKING PASRTY)
    4. STIR IN SUGAR AND FRUIT
    5. BEAT TOGETHER EGGS AND MILK
    6. MIX TO A SOFT CONSISTENCY (YOU MAY NEED TO ADD A SPOT OR 2 OF EXTRA MILK)
    7. PLACE IN BAKED TIN AND BAKE FOR ABOUT 50 MINS

    GOOD PART TO THIS MENU YOU CAN ADD VARIATIONS

    LEMON AND SULTANA - INSTEAD OF MIXED FRUIT, ADD 175G / 6OZ SULTANAS AND GRATED RIND 1 LEMON

    ORANGE AND SPICE - KEEP MAIN MIX AS NORMAL, ADD 1 X 5ML (TEASPOON) MIXED SPICE AND COARSLEY GRATED RIND OF 1 ORANGE - ADD THAT AT FLOUR STAGE

    DATE - KEEP MAIN MIX ADD 75G / 3OZ CHOPPED DATES

    CHOCOLATE CHIP - OMIT FRUIT - ADD 100G / 4OZ CHOCOLATE FINELY CHOPPED (OR USE READY PREPARED CHOCOLATE CHIPS)

    CHERRY CAKE (DDS COOK BOOK!)

    150G / 5OZ GLACE CHERRIES (THINK STANDARD SMALL POT OF GLACE CHERRIES)
    200G / 7OZ SELF RAISING FLOUR
    175G / 6OZ SUGAR
    175G / 6OZ SOFT MARGARINE
    50G / 2OZ GROUND ALMONDS (COULD SUBSTITUE FOR DESICATTED COCONUT)
    3 EGGS

    SMALL SIZE LOAF TIN 20CM X 12CM X 8CM / 8 X 5 X 31/2IN

    1. GAS MARK 4, 180C, 350F

    2. CUT CHERRIES INTO QUARTERS, RINSE UNDER WARM WATER AND DRY (THATS TO GET RID OF THE GLACE, AS OTHERWISE THEY WOULD JUST SINK TO THE BOTTOM OF THE CAKE) - TOSS THE CHERRIES IN THE FLOUR (AGAIN HELPS THEM FROM SINKING)

    3. GREASE THE TIN, THENLINE THE TIN WITH GREASE PROOF PAPER

    4. SIFT FLOUR INTO BOWL, ADD SUGAR, MARG, ALMONDS (OR COCONUTS),

    5. BREAK THE EGGS INTO A CUP (THIS ENSURES YOU GET NO SHELL IN AND IF YOU HAD A ROTTEN EGG YOU DONT RUIN THE MIXTURE), THEN POOR THEM IN TOO

    6. STIR WELL WITH A WOODEN SPOON UNTIL IT IS LIGHT AND FLUFFY

    7. STIR IN CHERRIES WITH A METAL SPOON

    8. SPOON INTO TIN, BAKE FOR ABOUT 1 1/4HRS

    9. LEAVE FOR 5 MINS B4 U TURN OUT. X

    Keep your eyes peeled for a book called The Jean Bowring Cookbook - it's got so many brilliant foolproof recipes, it even has the measurements conversions in the front of the book. If you are ever in need of a recipe, PM me and I'll probably have it.
    Also, Mrs. Beeton's cookbooks for the same reasons - old fashioned proper cookery.

    also we want a photo of the finished assignment please so we can judge your first attempt..i got my step daughter to bake a choc cake with me as she has never baked anything, her mum never bothered to teach her anything,she loved it...it was last year and she was 23!!!! lol

  • I got the following recipes from this board, somewhere and completely recommend as nothing needs to be beaten, just stirred together.
    Weetabix cake
    2 crushed Weetabix 1 cup of sultanas 2 cups of Self raising flour 1 cup of sugar

    Mix these dry ingredients together, then add 1 cup of milk and a teaspoon of mixed spice Stir again and pour the mix into a greased loaf tin, bake at 325 degrees for about 45 mins.
    [FONT=&quot]Coconut Bread

    1 cup self raising flour
    1 cup dessicated coconut
    1 cup sugar (I use about 3/4 cup)
    1 cup milk

    Preheat oven to 180C (350F).
    Mix ingredients until completely combined.
    Pour into a greased loaf tin.
    Bake for 45 minutes or until a skewer comes out clean.
    Cool on a cake rack.[/FONT]
    the weights are
    1 cup sugar = 200g
    1 cup dessicated coconut = 75g
    1 cup milk = 250ml
    1 cup flour = 250g
    Also very popular
    Banana Bread
    (great for using up those over ripe bananas)

    3 very ripe bananas (almost walking) or use defrosted frozen bananas! pinch of salt 6oz melted butter 1 teaspoon bicarb of soda dissolved in 1 tablespoon water 6 oz caster sugar 1 egg
    9 - 10 oz plain flour

    Smash bananas (food processor is great for this recipe). Add remaining ingredients, mix together. Pour into 2 greased or paper lined 1lb loaf tins or 1 lined 2lb tin. Bake in moderate oven (180C/350F/Gas mark 4) for 45 minutes. Will also make as muffins. Freezes well and is lovely sliced, toasted & dripping with melted butter.
    I have had lots and lots of praise when I have made these. All off recipe board or threads - cannot recommend enough.
