Easy recipe for coffee cake

I have looked in the index but can't find anything under coffee at all.
Want to know what I need to add to a basic mixture to turn it into coffee cake. I only have coffee granules. The icing is easier as I can taste that to see if it's strong enough.
Also, is there a conversion to work out how much mixture I need to make a tray bake. I am sure a 2 egg mixture is not going to be enough.

I just make a victoria sandwich mix and add a tbs of coffee granules dissolved in a little bit of hot water right at the end. This is for a 4oz mixture, but if you want to make it into a traybake then I think you would need 8oz flour, marg, sugar and 4 eggs and 2 tbs coffee. You really do need to dissolve the granules in water first though otherwise it won't mix in and the cake will be all spotty and taste funny. Another, and IMO, better way to flavour the cake is to add Camp coffee essence - it has a lovely taste, but I can never seem to get it anywhere.Jane

Hi, like Jane, I add a bit of coffee granules dissolved in a small amount of boiling water and allowed to cool to my cake mix.
For your tray bake, it depends on the size of your tray!The way I would do it is to calculate the cross section area of the cake tin recommended for the recipe, and that of your tray. Divide the second by the first, and this tells you by how many you need to scale up your recipe.
Let me know which recipe you're using, size of cake tin recommended, and the size of your tray, and I'll do it for you, if you like.

I know Waitrose and Sainsbury`s sell Camp coffee - it is great for coffee cake isnt it.
Here is my recipe for coffee cake.
6 oz SR flour
1.5 tsps baking powder
6 oz caster sugar
6 oz marg
3 eggs large
3 tsps instant coffee blended with 2 tsps of boiling water - add to sponge mix. Or use Camp if available
Mix all ingredients for 2 -3 minutes. Divide mixture between 2 7" cake tins greased and bottom lined. Cook in Gas 3 for approx 35 minutes.
Butter icing
2 tsps of instant coffee blended with 1 teaspoon of boiling water and add to 8 oz sieved icing sugar and 4 oz soft marg. If liked add chooped walnuts on top of cake. Enjoy!

I'm another fan of Camp Coffee Essence, and buy it in tesco. Its with the condensed milk/evaporated milk in my local store.
I use basic sponge mix - 6oz flour, sugar, butter, 3 eggs and add 60 ml camp coffee essence. When making the butter cream and icing I add camp essence to taste. Made 4 coffee cakes last night - on order for friend of a friend!!0 -
I buy it from my local ASDA and Tesco it's also available from Tesco.com
at £1.42 per bottle. IMO it's the best for coffee cakes.0 -
mmm I love coffee cake. When I made it as a kid with my mum we used to just add some coffee granules with a bit of water and stir it in. Yummy.0

You have made my mouth water. I love coffee cake! I have another recipe for the butter icing. Make the cake in a tray and put the following icing on top and then cut the cake into squares. Mmn!
284ml tub soured cream
280g white chocolate broken into chunks
4 tsp caster sugar
cocoa powder to shake on top
Melt the soured cream, white chocolate and sugar in a small bowl set over a pan of simmering water. Stir well and then leave to cool for 15 minutes. Spread over your cake. Shake the cocoa powder over the top to lightly dust and leave to set.0
