I make either a strong filter or an expresso and put that into coffee cake and coffee icing. It's lovely!Piglet

ordered coffee cake out in the US and ended up with little coconut & cream things that did not taste of coffee. When I asked the waitress about this, she said that coffee cake doesn't mean that it tastes of coffee, it's something you have with coffee.
I always wondered about that as some of the books I read talk about cherry coffee cake - I had guessed that it was just cake you have with coffee but I'm pleased you confirmed that for me :TNever let your sucesses go to your head and never let your failures go to your heart.:beer:0 -

Ooh thanks for posting this! really fancy a coffee cake. Does anyone know whether it works to add a little dissolved coffee to butter cream icing? I shall make a vegan version but vegan butter cream on it or sandwiching it would be lovely!

I've just copied this recipe from the link, sounds easy:
Here is my recipe for coffee cake.
6 oz SR flour
1.5 tsps baking powder
6 oz caster sugar
6 oz marg
3 eggs large
3 tsps instant coffee blended with 2 tsps of boiling water - add to sponge mix. Or use Camp if available
Mix all ingredients for 2 -3 minutes. Divide mixture between 2 7" cake tins greased and bottom lined. Cook in Gas 3 for approx 35 minutes.
Butter icing
2 tsps of instant coffee blended with 1 teaspoon of boiling water and add to 8 oz sieved icing sugar and 4 oz soft marg. If liked add chooped walnuts on top of cake. Enjoy!

The other week on the ferry I had a coffee muffin,since then I'm hooked & at the ASSISI open day I bought a home made coffee cake,it was lush!!:D
Just the right amount of coffee & iced to per-fec-tio-n!
I bought a 'coffee cake' from Sainsbury's the other day & I'm sure they forgot the coffee,
So does anyone have a simple,idiot/man* proof recipy for a coffee cake pleeze?...

For a coffee cake I just add a teaspoon or two of instant coffee and water to a normal sponge receipe, it's always worked and for a coffee butter icing it's just the same, butter icing with dissolved instant coffee in it very easy, just adjust the quantity til it tastes/looks how you like it. You can buy coffee essence but in my experience it just doesn't taste the same.
My family like a coffee trayback with choc drops on top but I HAVE to be even handed with the choc drops .... mmm0
