Ooo - recipe please!
Erm, basically, chop aubergine into wedge shapes, cover in salt and leave for a few hours to suck out a lot of the moisture, then wash and dry. Coat pieces in curry powder or whatever spice mix you want (I usually use curry powder plus a bit of extra chilli and paprika). Heat up oil in frying pan - needs to be pretty hot - and fry wedges until crispy on outside and fluffy in middle, you have to stir them quite a bit to stop them sticking. Have also made it by adding the spices to the oil while it's heating up and adding the plain aubergine to that.Debt@16.12.09 £10,362.38, now debt free as of 29.02.2012."I cannot make my days longer so I strive to make them better."0 -

it's not something i ever buy aubergine... i just might try it now i know something to do with it.........I'm just a seething mass of contradictions....(it's part of my charm!)0
