Carrot & Coriander Soup

As the title suggests - started to make carrot and coriandar soup but looked in the cupboard and NO GROUND CORIANDAR :mad:
I have fresh
Shall i put a little mixed spice in (cinnamon, coriander,nutmeg, clove, pimento and ginger) and then the fresh at the end?
Or just add the fresh?
Do you think the mixed spice will taste odd?0 -

Just chop up the fresh and put that in, fresh is probably better than ground anyway. Blitz when its done - souperb !0 -
I never use ground coriander in my soup, just fresh0

You couldn't post the recipe could you, only i've tried a few recipes and always seem to end up with some sort of curried carrots? Lol

Just thought i'd share my proudness of making my own Carrot & Coriander Soup!
All the ingredients cost about £1.90 all in all, so worked out about 30p per portion!
Ingredients
1 onion (chopped)
1 crushed clove of garlic
500g of chopped carrots
1 litre of vegetable stock
Black pepper to taste
Chop an onion and saute in butter or olive oil with a crushed clove of garlic until soft.
Add about 500g of chopped carrots and cook for a few minutes.
Add the vegetable stock, bring to the boil and simmer until the carrots are tender (about 15 - 20 mins).
Remove from heat and season with pepper.
Liquidise in a blender or food processor.
Serve into bowls and swirl in some cream or yogurt and/or sprinkle with fresh chopped coriander.
Variations
Use any combination of sweet-tasting vegetables instead of just carrots (parsnips, butternut squash, red or yellow peppers).
To make a thicker soup, add a chopped potato before simmering.

Cool, I doubled the quantity so made about 6 generous portions! I usually buy ww soups for about 68p each! So I'm definately spurred on to reduce my spending & be healthy at the same time! :j:jFRUGAL WANNABE! SAVING FOR AUSTRALIA 2015!
