Carrot & Coriander Soup

    This is one of my '2 stage' soups.

    I boil chopped carrots, sometimes a potato, and red lentils in one pan. In another I cook chopped onions and garlic in a little oil, adding ground cumin, coriander, and cardamom.

    I then blend the carrot and lentil mixture, adding milk until the texture feels right, and add that to the spiced onions, so the soup has a little texture. If I have any coriander leaf I add that at this stage, or sprinkling some chopped over the soup when you serve is even better.
  • Include some freshly squeezed orange juice (from the fruit, not a carton :eek: ...good way of using up sad fruitbowl oranges) and a squeeze of lemon/lime to add a bit of zestiness

    carrot & ginger:
    1tbsp oil
    12oz carrots
    1 onion, roughly chopped
    2 garlic cloves, crushed
    1in piece of ginger, peeled & roughly chopped
    11/2pt chicken /veg stock
    2tbsp lemon juice

    Sweat off onion, garlic & ginger in the oil. Add carrots & stock. Bring to boil & simmer for 15/20 mins until carrots are tender. Season and add the juice. Blend and sieve. Serves 4. Freezes well.

    Carrot & Coriander:
    1 tbsp oil
    2 bay leaves
    1 onion, roughly chopped
    2 garlic cloves, crushed
    625g carrots
    small bunch coriander, leaves seperated from stems
    2pts veg stock
    half tsp garam masala

    Heat oil, add bay leaves, onion & garlic &fry for 2 mins. Add carrots, coriander stems & stock. Bring to boil & simmer until carrots are cooked. Remove bay leaves & puree the soup. Sieve. Season & add the garam masala. Finely chop half the coriander leaves & stir them into the soup. Use the remaining leaves as a garnish. Serves 4. Freezes well.

    I didn't bother with bay leaves and I used dried coriander. It was very nice.

  • Hi folks I seem to have a glut of carrots left over and rather than freeze them I thought I would like to make some soup in my slow cooker .Has anyone made the above soup in a SC.I can only use one hand at the moment so I thought doing it in the SC would be safer that wobbling around with a big saucepan in my hand .Any one got a recipe for it ?

    If you google it you will get loads of recipes off the net.

    i have just made a big pan of soup and was wondering how long it would keep in the fridge (am trying to mealplan for the week)

    i really have no idea as i havent made it before (im usually a stew and dumplings kinda girl :o )

    Soup freezes really well,so if you aren't going to eat it in the next couple of days, portion if up and freeze it.
