Carrot & Coriander Soup

Hi,

Went out to a 'do' last night & had Carrot & Coriander Soup, does anyone have any recipes for this.

    Yep, Try this one.

    450gm / 1 lb carrots (pref young and tender)
    15ml / 1tbsp sunflower oil
    40gm / 1.5oz/3tbsp butter
    1 onion, chopped
    1 stick celery, plus 2-3 leafy celery tops
    2 small potatoes,peeled
    1 litre /1 & 3/4 pints / 4 cups veg stock
    10-15ml / 2-3tsp groundgorriander
    15ml / 1tbsp chopped fresh corriander
    200ml/ 7floz milk
    salt and pepper to taste

    Trim and peel the carrots and cut into chunks. Heat the oil and 2tbsp of the butter in a large heavy based saucepan and fry onion over gentle heat for 3-4 mins until softened.

    Slice the celery and chop the potato. Add them to the onion in the pan and cook for a few mins. Now add carrots and fry over gentle heat for 3-4 mins stirring and then cover.

    Reduce heat even further and sweat for about 10 mins. Shake the pan or stir occasionally to they dont stick.

    Add the stock and bring to the boil. Half cover the pan and simmer for a further 8-10 mins until carrot and potato are tender.


    Finely chop celery tops (about 1tbsp when chopped). Melt the remaining butter in a small saucepan and fry the ground corriander for about 1 minute stirring constantly.

    Reduce the heat and add chopped celery tops and fresh corriander and fry for further minute. Set aside.

    Process the soup in a processor or with hand held and pour into clean saucepan. Stir in the milk and corriander mixture. Season as needed.

    I use the following recipe, easy to make.

    Carrot and Coriander Soup
  • I use the New Covent Garden Soup recipe below, but omit the cream. It's really lovely and low fat too!

    25g (1oz) butter
    1 medium onion, finely chopped
    1 garlic clove, crushed
    550g (1 1/4lb) carrots, of which 450g (1lb) roughly chopped and 110g (4oz) coarsely grated
    1 litre (1 3/4 pints) vegetable stock (see page 6)
    a pinch of freshly grated nutmeg
    1 tablespoon chopped fresh coriander
    150ml (1/4 pint) single cream
    salt and freshly ground black pepper

    TO GARNISH:
    150ml (1/4 pint) yoghurt
    2 tablespoons chopped fresh coriander

    Melt the butter and cook the onion and garlic gently until soft in a covered saucepan, without colouring. Add the roughly chopped carrots, stock and nutmeg. Cover, bring to the boil and simmer gently until the vegetables are tender. Cool a little, then puree in a liquidiser. Return the soup to a clean saucepan and stir in the grated carrots, coriander and cream. Taste for seasoning. Serve garnished with a swirl of yoghurt and a sprinkling of chopped fresh coriander.

  • ok so i have loads of carrots that bought super cheap..........i would like to make a soup,carrot and coriander springs to mind as we had it recently in a restaurant and it was gorgeous.
    i need and idiot proof recipie please!!!!
    all carrot soup recipies welcome!!

    squeaks/pink/gingham..............i did try the search/index etc but couldnt find a recipie so thought id post.

    Carrot soup is one of my no point (Weightwatchers) favourites. Here's my recipe, which being no points is very basic.

    Chop an onion and put in saucepan. Add 500g carrots, a few peppercorns, three quarters of a point of chicken stock. Bring to the boil.

    Simmer for 45 mins. Use a stick blender to puree.

    Add coriander, possibly pureeing again. Fresh coriander is great, but if you can't get it then the next best is Bart's coriander which is "fresh" coriander in an oil suspension. I put in a teaspoon, blend again, taste, and add more if necessary.

    For a change, I use a potato peeler on parmesan, and put the parmesan in the bowl as I'm eating. This ruins it for no points, but adds an interesting taste.
