    hello everyone, hope your all getting on ok with your challenge.
    Just a quick question:
    When you make lasagna and you have extra that has been bulked out etc, how do you freeze it?? do you cook it in something that can also be frozen??(not sure i fi have anything that can go in oven and freezer!?!?) or do you try and take it out and put in bags (sounds to messy!!) or should i just make up the amount we will need and just freeze the left over mince to then take out and make a lasagna when next wanted????
    any ideas would be greatly welcomed......

    Hi - I do two things:
    I make a huge batch of mince and then make a large lasagne from it. Leftover mince gets frozen separately into 2 batches in tupperware type pots and will be defrosted and made into a lasagne another time.
    The large lasagne gets cooked, partly eaten and then the remaining bit cooled and sliced into portion sizes and frozen individually - either in tubs or wrapped in foil.

  • Hi all ,haven't been on or lurked for ages ,will catch up a bit later.

    Declaring November spend as £186.24,don't know about Christmas tho'.

    Let's go for an extra £50,so £230 for December please.

    DS was married on Nov 1st,fantastic day so relaxed and special,just heard that DS & DD-I-L are back from their honeymoon.
    I have also had 2 weekends away,hence the £6 overspend;) .

    Just steaming the last of the 12 Christmas puds I have made:D
    Will sell most of them for local charity,also making aprons and shopping bags,may go to work if I have time.

    Congrats on DS's wedding snowy!
    Frozen lasagne question - I'm now wondering if you can cook it from frozen and if so for how long?
    Rainbow had half price frozen turkeys here in Suffolk, so I imagine they are in all their stores. Planning to buy one for cooking next weekend. Sorry if someone has already mentioned this on here

  • :o Well, I must hang my head in shame, have overspent November's budget of £50 already, and still a week to go. It happened because I had the chance to go to Asda (12ish miles away), and as I have been eating out of my store cupboard I spent £22 there, to refill the store cupboard! I can't bear to have empty cupboards anymore, to be honest I would have spent a lot more but I wasn't impressed with Asda's prices or offers, they seem only to have offers on "crap" food, and the prices didn't seem that low.

    I don't know what to have as a budget for December, maybe I will go for £60, bearing in mind it is Xmas and I want some goodies, also my freezer is now full (thanks mum!)as are my cupboards.

    OK, I will try to be really good next month £60 for December. :o

  • Well i have just updated my spreadsheet and my spend to date is £415 - and after having shopped today and my cupboards are now bursting so all i may need before 1/12 is milk - this is great the first month since i started recording my spend I may come in under my £450 budget - i also think that i may be able to keep the £450 in december and still have a great time. I have finally stopped buying the extras we never really need and am now slow cooking and baking my own bread and it is great - i now feel in control of the spending which is great:T :T

    thankyou for running this challenge it has focused me and we are eatting alot better. the kids love the home made bread and there is something very satisfying knowing I have done it myself!!!

    I will pop on again next week end to confirm my final spend - i intend to leave my debit card at home all week to stop me from spending!!
  • HI,

    I think you would be able to cook from frozen but you would need to cover the top with tin foil to stop it burning. I would probably go for gm5 or 6 until the middle of the lasagne was piping hot so the time would depend on the size of the dish.

    So far I have spent £142.98 and that includes 3 packs of beer from asda 3 for £20 ,,and have included that this week ,,I have been living out of the freezer and such and cooking enough to refill it

    still cant include fuel but soon hopefully

    only one week to go I think or is it days I cant remember

    doing quite well this month! So far have spent £249 ish (check sig to be exact!) My month ends on the 28th which is Friday, I will shop for this week tomorrow at Aldi (usually about £45-£55) so will come in under budget!!! YAY! Not going to lower the budget amount for next month as it is Crimbo after all, but will try for a bit lower in January!

    Spent a whopping £47.00 in Asda today. Was horrified considering on my list I had everything down at £30 odd - that will teach me to leave the list behind at home.
