Hi I suffer from ME and am currently having a severe re lapse. In the latest ME mag someone mentioned that they have a gluten free diet has helped them. I am prepared to try almost anything lol however I dont know where to start. Any ideas/recipes would be so helpful. Thank you.
PS. I have to have complete bed rest at the moment so any quick recipes would be good x0 -

Don't forget the things that are naturally gluten-free such as fruit and veg, eggs, milk, potatoes & rice & some people who have coelaics can also tolerate oats. For gravy or a base for shepherds pie, we use Bisto Best & for home baking Doves Farm flour seems to be the best.
Funnily enough, I have just been reading a book about ADHD & that also said that a gluten-free diet may help as it apparently may also do with autism so I can see why it may have been suggested with ME. I guess it may be worth giving it a go although I suspect that any results wont be instant. I am also gluten free but not celiac. It made a huge difference when I gave it up. I got an ME diagnosis 11 years ago but it was a misdiagnosis and the problem is Lyme Disease and this is the case for a lot of folk with ME. I got a blood test by a German doctor but the test on the NHS is unreliable. Getting back to the diet, I would suggest you buy the GF bread from the supermarkets and other stuff you need there is a good selection now. There are lots of things that contain gluten and you will have to research that. Many shampoos etc are not gluten free but it depends on bow sensitive you are. Dont lick stamps! It is easierto eat natural foods then things with a long list of ingredients. Once you get gluten out of your system which takes about 6 months, you can really see the difference. If I get a tiny bit now it makes me really ill. I can eat oats only if they are specified gluten free, that mans grown away from gluten crops. Good luck!0 -
Probably best if you just eat simply at first, us8ing fruit, salads, fish meat and veg till you get used to the diet. I cook from scratch for most things but have been bed bound and really ill during relapse. The thing about Lyme Disease is that it follows a pattern of relapses, in fact it is called relapsing Disease sometimes.

I cant takieantibiotics and in fact they dont work for a lot of people. Hope you dont have it but best to know it you do.0 -
I agree with everyone above about eating naturally where possible as lots of processed foods contain gluten in one form or another, things like stir frys are quick even when cooked from scratch. You can get gluten free bread, flour, bread mix, pasta and biscuits on prescription. The bread mix makes a nice loaf in a bread maker. You also need to be careful with malt which is found in many cereals etc.Thoughts to all. Mrs D.

I also am recovering from Lyme Disease....and have been following the basically Gluten Free diet or rather the Paleo or Stone Age diet. I found huge benefits very quickly, great increase in energy levels, generally feeling better in myself.
Use coconut or almond flour instead of wheat flour.

I have been diagnosed coeliac for a few years now. Generally, I find the diet OK but it is a bit of a stretch on the old budget! I hope this is the right place to post - haven't found another gluten free thread in my search so far.
I love cooking things from scratch and was wondering if there is anyone else out there who is gluten free and whether you have any interesting / exciting recipes you want to share?
I make most of my meals from scratch, including stews, curries etc. I have a pretty good gluten free cake recipe which is popular at work, and I make a mean banana cupcake! The thing I struggle with most is breakfast - mostly I have gluten free toast (from prescription) or gluten free cereal.
Am happy to share my recipes if anyone is interested but would love to hear your gluten free suggestions.0 -
Can you eat eggs? I often have omlettes for breakfast with mushrooms or bacon. Could also have scrambled eggs on toast or beans on toast.
