Just trying to fill in a few gaps in next weeks meal plan. A
Any suggestions for what to make for dinner with some chicken???
Also trying to think of some non-sandwich lunch ideas or at the very least more interesting sandwich fillings!0 -

Here is another lunch thread someone started.
Cold quiche/frittata is a favourite of mine, or wraps instead of bread (or at least was when I worked). Fillings depend on your taste I suppose but I find a spoonful nice relish or pickle (a fancy posh one) can cheer any sandwich up! Is it a home or work lunch ?
(I am sure someone else might post better links soon but this might do in the meantime!).

MIL is arriving today for three days (with SFIL) - it's a 'let's support son who has been diagnosed with Parkinsons' visit, which is nice, but it's not ideal timing for me, as I need to work all weekend (as usual for this time of year).
So ...
Saturday dinner: roast lamb, roast potato, roast parsnip, carrots, green beans, gravy (MIL's favourite)
Sunday lunch: at pub
Sunday dinner: hm soup of some sort (probably lentil or maybe a barley brothy sort of thing), crumble & cream
Monday dinner: sheperds pie with the leftover lamb, peas & carrots
Tuesday (just us again): chicken satay and rice (frankfurters for the child who doesn't like spicy things)
Wednesday: spaghetti bolognese
Thursday: leftover bolognese turned into chilli, rice, tortillas
Friday: last night's chinese takeaway leftovers retrieved from freezer - crispy beef, mixed veg and rice - and then add to that with duck in plum sauceMortgage started on 22.5.09 : £129,600Overpayments to date: £3000June grocery challenge: 400/6000 -
Hi
I'm late this week - I was in the US until Friday and then in Wales collecting the dog from his "nana" all weekend.
So this week.....- Monday - leek and potato soup (leftovers for lunch on Tues)
- Tuesday - something to use up fresh peppers, onions, mushrooms - not sure what yet, don't fancy chilli again, perhaps a veggie curry?
- Wednesday - enchiladas
- Thursday - BBQ "chicken/quorn" and wild rice
- Friday - something easy out of the freezer and chips/wedges
I should have everything I need to make all of the above and am trying to stretch the shopping out into next week too.0 -
Bit late in posting again this week, but have been following my MealPlan so far...
sat: Chilli w/ jackets
sun: Chicken Curry (made with thigh meet for first time - less than half the cost + super tasty - so will do that again for sure!)
mon: Tuna Pasta Bake (made extras for freezing but didn't get it into the freezer quick enough - OH stolen it for his lunch! )
tue: HM Pizza
wed: Toad in the Hole
thu: Sardines w/ salsa
fri: Aubergine Parmigano
lunches; leftovers, corned beef sandwich, tinned tomatoes on toast, tuna melt.0
